Hello Girls,
One of my friends here will be coming for dinner over my place this weekend. She is a veg, so I will have to make veg dishes. In fact she has even told me that she wants to veg ‘paneer tikka’. Being an amateur in cooking, I have no clue how to make it, she knows that, maybe she is testing it. Anyways, I don’t wanna order from outside. I have searched the net but there are so many recipes, I got big time confused. Please post a simple recipe of paneer tikka and also post two other veg dishes with recipes.

Aparajita
• 1/2 kg Paneer, cubed into 3 cm pieces
• 200 gms Plain yogurt
• 2 tsp Garlic paste
• 1 Lemon
• 1 Onion, sliced
• 2 tsp Ginger paste
• 1 tsp Chaat masala powder
• 2 tsp Tandoori masala
• 1 tsp Black pepper
• Salt to taste
• Few drops of red food color
• Cooking oil for brushing
method
Mix together all ingredients except the ingredients for garnishing.

Leave it aside for half an hour.

Preheat oven to 350 degree F. Keep the paneer in a drip pan and bake for about 10 minutes.

Remove and brush the paneer with oil and again bake for 10 minutes.
Ingredients 3 big tomatoes - pureed
250 gms paneer - cubed
2 big onions
1 bay leaf
2 cloves
1 tbsp ginger-garlic paste
1 tsp red chilli powder
3 tbsps cashewnut paste
1/2 tsp turmeric powder
1 tsp dhania powder (dry coriander powder)
1/2 tsp kasuri methi (dry fenugreek leaves)
1 tsp tandoori masala (optional for color)
2 tsp garam masala powder
salt and lemon juice - to taste
3 tbsp butter
3 tbsp fresh cream
fresh coriander - chopped for garnish
Method Skin the onions and blanch them in hot water for 3 mins, then ouree them to form a paste. Do the same with tomaotes, unless you are using tomato puree directly.
Take 1 tbsp of ghee, heat in a pan for 2 mins, the saute the paneer cubes in it till golden brown; Now take 1 cup hot water, add a pinch of salt and turmeric powder to it and immerse the paneer cubes in it for 10-12 mins. Then remove the pieces, drain them on a tissue paper and keep aside.
Heat 2 tbsp of butter in a pan, add the bay leaf and the cloves, then add the onion paste and saute till light-brown. Add ginger-garlic paste. Saute for 3 minutes. Add chilli powder, followed by the cashew paste and fry for 5 mins.
Add tomato puree, crushed kasuri methi,coriander powder, turmeric powder, garam masala and salt. Stir and let it simmer for some time.
Add the paneer cubes and simmer for 4-5 minutes. Add a small cup of water and let it cook on medium heat till you get the desired curry consistency. Remove from fire, stir in remaining butter and fresh cream.
Garnish with coriander leaves. Serve the Paneer Butter Masala with any bread of your choice, pulao or simply jeera rice

You are already given recipes of two dishes. Thanks Aharia for the recipes, I was even looking for it. Aparajita, you can try our famous ‘alu posto’, this dish belittles many other veg dishes, don’t you agree? It is my fav. I am posing its recipe below:
Ingredients:
Potato (Aloo): 4 medium sizes
Poppy seeds (Posto): 3 tablespoons
Nigella seeds (black jeera): 1 teaspoon
Green chili: 3
Turmeric powder : ½ teaspoon
Mustard oil: 1 tablespoon
Salt to taste
Method:
Make a soft fine paste of the poppy seeds and keep aside. Then cut the potatoes into small square pieces. In the mean time Heat oil in a wok over low flame, add the nigella seeds. Throw in the chopped potatoes along with the turmeric powder, green chilies and salt. Pour about a cup of water and let the chopped potatoes get half cooked. Finally add the poppy seed paste and cook till the potatoes are well cooked. Put water if necessary

Firstly same pinch with Alpa, cause I too love to gorge on ‘paneer’ dishes, and a huge THANKS to Aharia for posting the recipes of paneer tikka and butter paneer masala. Aparajita also deserves special THANKS for coming up with this thread.
To Chandrima, good that you have posted the recipe of Aloo posto, it is also one of fav dishes. I am a big foodie and can really eat anything that is digestible!!! Lol!!!!!

I am so happy that you both have helped me. I did cook all the three; of course my hubby was there to help me. It was my first time but the dishes did come out well. My friend has appreciated it. I am happy. So I am a COOK as well. Lol!!!!!!!!!
