gongura mutton

u need
  • required amount of gongura depending on your taste
  • mutton required amount
  • chopped onions and chillies
  • curry leaves
  • ginger garlic paste
  • daniya and garam masala
  • salt
  • red chilly powder
  • red chillies
  • oil
  • cilantro
  • shahijeera
procedure
  • boil gongura and grind it to paste and keep aside
  • in a bowl add mutton ,salt,redchilly ,daniya ,garam masala ,turmeric powder and ginger garlic paste and keep aside for 10 min
  • add oil in a pressure pan and heat it
  • add little shahi jeera to it and chopped onions and green chillies
  • add curry leaves and red chillies
  • now add the marinated mutton to it and allow it ti cook till there is slight colour change
  • add little water and cook for about 5-6 whistles till the lamb becomes tender
  • when it is done allow the water to evaporate and add the paste of gongura and cook till the mixes nicely with curry and slightly oil appears back
  • garnish with cilantro

dosakaya pappu

u need
  • required amount of toor dal
  • depending on the quantity of dal cut the dosakaya pieces
  • turmeric powder
  • tomatoes
  • a small piece of tamarind
  • red chilly powder
  • salt
  • oil
  • garlic pods 1-2 cut to small pieces
  • curry leaves
  • red chillies 2-3
  • a mixture of mustard ,cumin and urad dal -1-1/2 tbsp
procedure
  • in a pressure cooker add washed dal ,dosakaya ,tomatoes,tamarind ,turmericpowder,salt ,red chilly powder and cook till the dal softens (3-4 whistles) with double amount of water to dal
  • now in a small pan add oil and allow it to heat
  • once done add the seasoning mixture,red chillies,garlic and curry leaves
  • let them splitter and add this to dal
  • now cook on a slow flame for 2 min and take to serving plate

stuffed bendi with onion paste

u need
  • bendi required amount
  • 2-3 tbspoons urad dal
  • red chillies adjust to our taste
  • 1/2-1 onion cut to pieces
  • oil
  • a mixture of urad dal+cumin seeds+mustard seeds for seasoning
  • salt
procedure
  • in a small pan add little oil and add urad dal after it heats
  • then add red chillies when they turn to light brown colour turn off the flame
  • allow that to cool and grind it first ,then add the onions to it and grind to paste ,along with salt
  • now slit the ladies fingers lengthwise and also the edges
  • now stuff this with the onion paste
  • add little oil in a shallow pan and allow that to heat
  • now add the bendi and if any left over paste place it in the pan
  • now slowly cook on a slow flme still you get a nice flavour and the paste comes sepate ,bendis are ready to eat

alu semiya tikki

u need
  • boiled and mashed alu required amount
  • boiled semiya 1/2 quantity to alu
  • corn flour
  • cumin powder
  • salt
  • chopped green chillies adjust
  • chopped mint and cilantro leaves
  • oil
procedure
  • in a bowl add alu,semiya and mix them
  • add corn flour ,salt and cumin powder to this and bring to the consistency such that tikkis can be made easily
  • now add chillies and leaves of mint and cilantro to that
  • make same tikkis of this mixture and keep aside
  • heat a pan and use oil or butter for frying the tikkis both sides and once they turn dark brown on bothsides they are ready to be served
  • enjoy with tomato sauce

egg in milk gravy
u need
  • required number of boiled eggs
  • ghee/oil prefer ghee
  • onions required for gravy
  • green chillies (adjust to taste)
  • shahijeera+cardimon+cinnamon+cloves+bay leaves
  • milk
procedure
  • heat ghee in a pan and allow the mentioned masalas to splatter
  • adding turmeric powder is optional
  • grind onions+green chillies ,add this paste to the pan
  • cook till the rawness leaves
  • in another pan add little ghee and mark little incisions on eggs and fry them slightly in ghee
  • add milk to the onion paste and allow it to cook to the required consistency
  • add salt to this
  • now add the eggs to the paste and allow the oil to appear
  • then garnish with cilantro
  • this goes well with jeera rice

mamidi thurumu pachadi
u need
  • required amount of grated raw mango with peeled skin
  • pinch of turmeric powder
  • salt
  • red chillies ,required number
  • curry leaves
  • a mixture of cumin seeds+mustard seeds +urad dal
  • oil
procedure
  • heat oil in a pan and add the above mentioned mixture ,allow them to splatter
  • add red chillies and curry leaves ,turmeric powder also
  • add the grated mango and cook for 2 min and off the flame
  • its ready to serve now
