Cool Cakes, Pastries...........

This recipe is for the banana bread that goes well with tea or coffee. You can also serve it with ice-cream as a dessert.

Ingredients:

All Purpose Flour (or Maida flour) - 2 cups
Sugar- 1 1/4 cups
Baking Soda-3/4 tsp
Salt- 1/2 tsp
Chopped walnut-3/4 cup
Raisins- 1/4 cup
Ripe Bananas - 5 - mashed
Egg - 2 (or Egg Beaters - 5 tsp)
Yogurt - 3 tsp
Vanilla extract-2 tsp
Butter- (1/2 cup melted)

Preparation Method:

Take a big bowl add flour, sugar, salt, baking soda, nuts and raisins and mix well. Beat the eggs or if you are using egg beaters, mix it in a bowl adding vanilla extract, yogurt, melted butter and the mashed bananas. Add this mix to the flour in the big bowl and mix thoroughly.
Take a flat pan, grease it with butter and dust with all purpose flour. Fill the mixed batter in the pan and bake for 60-70 minutes at 375F in the conventional oven. (Preheat the oven to 350F).

Check if the cake is well done by inserting a tooth pick in to the cake at the center. If it comes out clean then the cake is done. Switch off the oven, take the cake out and cool it. Then cut in to pieces.

You can store and use this yummy banana bread for 3 - 5 days.

Ingredients :

Thick curds - 1 cup
Sunflower oil - 1/3 cup
Sugar - 1 cup
Maida - 1 1/2 cup
Baking Soda - 2 level tsp
Cocoa powder - 3 tbsp.
Coffee powder - 1 tsp (Instant)
Chopped dates - 3/4 cup
Chopped nuts - 1/2 cup
Apple sliced - 1 no.

Method :

Sieve Madia with baking soda, cocoa and coffee powder.
Grease a baking dish and keep aside.
Blend curds, oil and sugar in a mixer. Add chopped dates, nuts and apple and run the mixer for few seconds. Finally add the sieved maida mixture little by little and run the mixer till well blend.

Pre-heat the oven (OTG) to 180 degree C .

Pour the cake batter to the greased baking dish and bake for 40-45 minutes. Insert a skewer to check if done. Do not cut the cake when its still hot, it will crumble. Cut it only when it has come down to room temp.

Can prepare chocolate icing if required. Do write to me if u need the recipe for chocolate icing.

Default Choco-Potato cake

CHOCOLATE-POTATO CAKE

Ingredients :

Potatoes - 2 (medium sized)
Powered Sugar - 2 cups
Butter - 200 gms
Maida - 1 1/2 cup
Egg - 4 nos
Grated Chocolate - 1 cup
Cashew - 100 gm
Baking Powder - 2 tsp
Salt - a pinch'
Cinnamon powder - 1/2 tsp
Milk - 1/2 cup
Vanilla essence - 1 tsp


Method :

Grease a baking dish with butter and dust generously with maida. Pat the pan to remove excess maida and keep aside.

Boil potatoes till it is just cooked ( not over-cooked). Cool, peel the skin and refrigerate for 30 mins. Remove and grate. keep aside.

Grate chocolate. keep aside.

Sieve Maida, Baking powder, cinnamon power and salt. Keep aside.

Take butter in a bowl and add powdered sugar. Mix well using a wooden spatula or Electric hand blender, till soft and creamy. Add the egg yolk one by one and mix well.

Now add the grated potato, grated chocolate and split & broken cashews. Mix well. Add sieved Maida mixture slowly and mixing continuously followed by milk and a tsp of vanilla essence. blend well to form the cake batter.

Lastly add well beaten (foamy) egg white. Blend softly and pour the batter onto the baking dish and bake in a pre-heated oven for 35 - 45 mins... at 210 degree C.

Note : If the potatoes are over cooked, its difficult to grate them.
Nestle cooking chocolate bars can be used for this recipe.

Default Eggless Curd Cake

Eggless Curd Cake:

Ingredients:
Flour-1&3/4 Cup
Ordinary Sugar-1 Cup
Oil-3/4 Cup
Curd-1 Cup
Meetha Soda-1tsp levelled
Cocoa powder-8tsp
Coffee-1/2tsp(Optional)
Vanilla essence-1tsp
Milk-1dsp
For icing:
Cocoa Powder-2 1/2tsp
Icing Sugar-4 dsp
Water-3 to 4dsp
Vanilla essence-3drops
For decoration:
Walnuts-1/2 cup
Cherries-1/2 cup

Method:
Add oil,sugar,curd in a bowl and mix them in one direction using a spatula to form a thick mixture.
Sieve flour,soda,cocoa powder and coffee.
Add siefted mixture to the above curd mixture.
Mix in one direction.
Add vanilla essence and milk and again mix.
Pour mixture in baking dish or borosil dish.
Level it properly by keeping a towel underbowl.
Microwave for 7-8 min.
Check with the help of knife.
Icing mixture-Add cocoa powder, essence,icing sugar and water and make a smooth paste.Spread icing mixture on the cake.Garnish with walnuts and cherries and grated chocolate.
Cool it under fan and can be stored in air tight container in the fridge for few days.

Chilled Cake

Ingredients:
Marrie Biscuits-1 small packet
Fresh Cream-250gm
Cocoa powder-8tsp
Vanilla essence-1/2tsp
Icing Sugar-2 1/2dsp
For decoration:
Walnuts-1/2 cup
Cherries-1/2 cup
Cream-little
Garted Chocolate-1 small

Method:
Mix cream,cocoa powder,sugar, essence and blend them into a thick mixture.
Arrange biscuits on a plate or dish.
Pour the mixture and spread evenly.
Again arrange biscuits and pour the mixture and spread evenly.
Cover it with grated chocolate,crushed walnuts and cherries.
Freeze till hard enough for about 20min. Serve chilled.Can be kept in fridge.

Hello Seetha,

First time that I get a query like this. I'm surprised u don't take coffee.
Don't u wanna try with a smallest packet of coffee available??????? Just to see if u like the taste....
If u are sure u don't want to use coffee powder, just use cocoa powder in place of it with the same qty i.e. 1 tsp...

hOpe u like the taste.....

Default that was wonderful

well i tried the receipe , and it turned very well. My mom does not have eggs , this was a good treat to my mom.

i had put some fresh cheeries and cream (tried some to make it like blackforest). it was very yummy

Mom liked it so much that it was made on diwali and even it was offered to god as prasad( as no egg)

Hi Ashna/Vishnu Vandana,

Default Meetha soda

Another quick question...is meetha soda same as baking powder or is it soda bicarb? I believe both are used in baking, but I am not sure what 'meetha soda' stands for...
