Hello AC,

Thanks for that big "Yes". here we go with the recipe.

Before the recipe comes, I want to start off with a little story:

Some days back Chitvish told me that she has got pretty old foreign edition book on baking which has got very authentic recipes, since then I was interested in the baking session with Chitvish. I can and have tried some cake recipes with success but it was sans all the icing and the decoration, just plain sponge cakes. Knowing the warm person that Chitra is she readily invited me to her home for baking session and above all lesson in Icing.
So here we go with the recipe of Rich Chocolate cake:..

The expert ( read as Chitra) says : Anybody serious about baking should get the Electric Beater (see attached image). Also it is good to have an electric Beater if you do not believe in arms power or you do not want to end up with shoulder pain.

Step 1:
Cream together ( 180 gms ) butter and (180 gms) caster sugar till a creamy consistency is reached.

Step 2 : Beat in the eggs( 3 in number) and add a few drops of vanilla essence.

Step 3 : Sieve together 240 gms flour, 45gms. cocoa, 2 1/2 tsp baking powder and a pinch of salt.

Step4: Add this to the creamed mixture with enough milk to give a soft dropping consistency

Step 4: Pour this mixture into baking tin and bake.

We divided the mixture into 2 portions. One part we baked in Microwave oven ( Microwave mode - 5 minutes - timing might vary depending on the oven brand and type)
The other part we baked in OTG ( timing is 30 to 45 mts -for the temperature and time setting refer your OTG manual)

Default Sandwich cake with Glaze Icing

The first part which came out from the microwave oven was given a chocolate Galze Icing.

Cut the cake horizontally into 2 parts. Mix butter and icing sugar and cream the mixture in between the 2 parts liberally and sandwich them together.

Mix sieved icing sugar, cocoa powder with little water and keep it in a low flame till a glazed mixture is obtained. Pour this mixture over the cake.

Default Sandwich cake with Glaze Icing

After the glaze icing is poured over it, decorate it with white chocolate shreds and cherries.

Appadi irutha naan appadi aiyettean. Before and after pictures of the decorations.

Default Fresh Cream Icing

The second portion of the cake was ready from the OTG and allow it to cool completely.
Blend together fresh cream and icing sugar and refrigerate it till the mixture is thick and creamy.
Apply this liberally over the cake and decorate it with cherries. The final finished cake is seen in the first post.

ILites have a try at the cake and sure you would love it.
