| dear anaya . receipe for making jalebi flour -1 i/2 cups baking soda-1 tsp sugar-2 1/2 cups cardamom powder-1/2 tsp ghee-to deep fry yellow or saffron colour(optional)-a pinch mix flour and cooking soda .mix some water and make a smooth batter.leave it over night to ferment.add water t to a make it into pouring consistency.prepare sugar syrup with equal amount of sugar and water.add cardamom powder.cook for 20 mts. heat ghee or refined oil.pour the batter into a jalebi cloth or milk cover and pour it overmedium hot oil.cook on both the sides.remove and dip it in sugar syrup for 5 mts.serve. when i was in gujarat i have seen hot jalebis being served in the railway stations along with methi pakoda for breakfast. yours kanaka raghavan |
