When I was unsuccessfully looking for good yeast in Delhi I was told to get some from restaurants that make naan especially the muslim ones. I don't know if this is correct or can help you. They were talking about the cake kind of yeast.

Hi

Have you tried fresh yeast from Nilgris? It is good. Also, if you know of a bakery in your area, you can ask him to get yeast for you. Mine supplies to me whenever I ask. Most bakeries buy in bulk, and wont mind parting with about 50 grams or so, on a nominal charge.

Cheers
Archana

Thanks a bunch tashidelek2002 and archana,

I was thinking whether I can really go and ask in the restaurants or the bakery,...but now that both of you gals suggest that, I think...will go and do it.In the mean time, archana, I have bought only dry yeast from Nilgris and not fresh one.Didn't know it ever existed.I shall try that first before approaching the eateries or the bakery thing! Thanks again.

Kaluputti:
Be sure that you proof your yeast before using. Dilute it in a little warm water with a little sugar in it. It will bubble up as it comes to life and then use it.

Kaluputti,

I prefer fresh yeast anyday. Dry yeast needs the proofing, but I have had moderate luck with it. Fresh yeast gives a good doubling and more healthy looking bakes!
