    COCKELS WITH RICE DUMPLINGS


    Mutli (Pundi) or Rice dumplings


    Ingredients
    • Boiled Rice-1 Kg.
    • Salt to taste.
    Method
    • Wash and Soak the rice for 2-3 hours
    • Strain out the water, grind it fine with salt to taste.
    • Dough should be dry and soft.
    • Make small dumplings* and steam for about half an hour.
    Masala


    Ingredients
    • Dry chillies- 12
    • Pepper corns-8
    • Coriander seeds-2 tsp.
    • Jeera 1 tsp.
    • Mustard-1 tsp.
    • Turmeric
    • Garlic-6 flakes
    • Onion-2
    • Tamarind- small lemon sized ball
    • Coconut-1 full.
    • Coconut juice (Both thick and thin)
    • Salt to taste.
    Method
    • Roast chillies, onion, coriander and coconut separately.
    • Grind all the masala including roasted coconut with thin juice.
    • Warm oil and fry onions.
    • Add masala and water.
    • When boiled well, put in the rice dumplings and after 5 minutes and cockles.
    • Add thick coconut juice.

    CHICKEN KASURI METHI CURRY



    Ingredients:

    1. 1½ kgs chicken
    2. 2 tsp ghee

    3. 2 chopped tomatoes
    4. 2 onions sliced


    PASTE

    1. 3 chopped green chillies
    2. 1 inch ginger pcs
    3. 3 pcs garlic


    WHOLE GARAM MASALA

    1. 1 pc cinnamon stick
    2. 3 cloves
    3. 2 cardmom


    POWDERS

    1. 1 tsp jeera powder
    2. 1 tsp coriander powder
    3. 1 tsp turmeric powder
    4. 1 tsp red chilly powder
    5. 1 pinch of methi powder
    6. 3 tsp kasoori methi


    • 3 tsp tomato paste
    • salt to taste
    Method:

    1. In a pan, add 2 tsp ghee fry sliced onions till golden brown, add chicken.


    2. Add whole garam masala.

    3. Let it cook for 10 minutes.

    4. Then add chopped tomatos,paste and all masala powders given above with tomato paste diluted in water, stir well and cook for sometime.

    5. Tasty red kasoori methi chicken curry is ready.

    6. Serve hot with Roti or rice.

    thanks for uploading the recipes. I have been looking for the first receipe (pundi/marvai) and going to give it a try today. waiting to see more mangalorean recipes from you.

    Dear Harshamanu, A friend of us brought curry powder from Mangalore for us and it was really very nice. I don't think it has any garam masala ingredients in that but it smells really nice and when added to dishes tastes heavenly. He said even in Mangalore it is available in only a few shops. Do you happen to have the recipe for this. If so please post it here. Thank you.
