How to make quick vegetable pulao:
    • Wash and soak the rice for 1 hour, drain and keep aside.
    • Slice the onion finely and chop the potatoes into small pieces.
    • Heat oil in a pan and fry the onions till golden brown, add all the vegetables, cinnamon, cloves and cardamoms.
    • Saute for 2-3 minutes, add little water and cook till the potatoes and peas are half cooked.

I like this pulao (in fact had it tonight as part of dinner. I cook it in a rice cooker.

Put couple tablespoons of ghee in rice cooker and turn it on. Put in a stick of cinnamon and 3-4 cloves. PUt in one sliced onion and start it frying. Then just dump in:
    1 lg carrot in matchsticks
1 med capsicum remove stem and seeds and cut in pieces or strips
    200g paneer in cubes
    400g mushrooms cleaned and quartered
    1 c rice
    2 c water
    1 1/2 t salt

I put a paper towel under the lid of the rice cooker during the cycle to increase the steam.

After soaking the rice, if you will roast the rice in a little ghee before you add to the veggies for boiling, it will taste even better
