INGREDIENTS : 150 gms chocolate chopped ( preferably plain cadbury's ) 1-1/2 cups cream 1 tsp vanilla essence a pinch of salt INSTRUCTIONS : In a small pan,over high heat, heat 1/2 cup of cream till small bubbles start appearing at the edges. Do not bring it to boil. Add this cream to the chopped chocolate. Whisk until the chocolate is completely melted.Allow it to cool.Then add the vanilla essence and salt. In another bowl,take the rest of the cream(1 cup) and beat it to make it stiff. Add the chocolate mixture to the whipped cream and beat again on medium speed until the mixture becomes soft.Pour into serving bowls/glasses and refrigerate for some time.Serve chilled,garnished with mint leaves.

my personal mousse (French...). Not so fast, coz we are on the "slow food" side 150 gr dark bitter chocolate, cut in small pieces 30 gr butter 4 eggs, white and yolk separated 1 table spoon vanila sugar 6 cl cream, very cold 45 gr sugar (reduced in fine powder in the mill) - melt the chocolate in a bowl placed on a pan with hot water. Place on a low heat, then add the butter and mix well. Remove from heat as soon as the mixture is OK (it shouldn't get too hot). Set aside to cool - beat egg yolks with vanila sugar until it's white and fluffy, then mix with the chocolate/butter. - beat the cream in a cold bowl until it is firm ("chantilly") - beat the egg whites until very firm, adding the (fine/grinded) sugar progressively. Add a third of these whites to the chocolate and mix well. Then add the rest very carefully, turning with a spatula until there is no trace of white left. Go slowly! - refrigerate at least one hour before serving. Enjoy!
