Nadan Kerala Dishes

    Lets share the recipes of "Nadan" dishes from Kerala.

    Ada

    Ingredients

    Rice flour
    Jaggery
    Grated Coconut
    Banana/green gram(cooked)/jackfruit
    cardamom powder
    cashewnut,dry fruits(optional)
    water

    and
    plaintain leaves

    1. Boil water with salt. Lower the flame and gradually stir in the flour.
    2. Remove from fire, and knead well into a dough without any lumps. Divide the dough into small balls
    3. Take jaggery powder in a vessal. Add grated coconut and the Banana/green gram(cooked)/jackfruit into the jaggry and mix it well
    4. Clean and wipe dry banana leaves.
    6. Spread a portion of the dough evenly on a leaf, with fingers. It should be spread thin.
    7. Spread a portion of the jaggry mix over one half of the dough. Fold over the other half. Press and seal the sides. Repeat till the dough and filling are used up.
    8. Steam the adas for 30 minutes.

    Kozhukkatta

    Ingredients

    Chempa Rice (Red coloured rice)
    Salt
    Cumin seed
    Coconut

    Optional For filling (Jaggery - 100 gms,Coconut - 3/4 cup,)

    Soak the rice 1-2 hours and grind it with out water. (Grind not as paste,it may seems granules) Add grated coconut, salt and cumin seed in it. Make the dough into soft balls. Put the balls into the boiling water and cooked for 10-15 minutes. After that take the balls from the vessal and keep aside to cool. We can drink the water on which the kozhukkatta has been made, which seems like soup. Yummy kozhukkattas are ready Serve the kozhukkattas with jaggery.
