    Hi Ladies
Just wanted to share a couple recipes for making okra/bindi without deep frying. I think that the baked is delicious, easy and more healthful. Here are a couple recipes. If anyone has additional recipes to share, please do.

Wash and trim your okra pods or if you like them sliced do that.

    For an Indian bindi:
    Marinate in:
    1 1/2 T. ginger paste
    2 T. oil
    1 T. lemon juice
    1 T. coriander powder
    1 t. cumin powder
    1/2 t. salt

Lay out on a greased sheet and bake in a convection oven at 400F until done (start checking for doneness at 10 mins).

    For a western version:
    Make a masala mix of:
    1 t. salt
    1 t. sweet paprika
    1 t. sugar
    1 t. coriander powder
    1/2 t. black pepper powder
    1/2 t. chilli powder (cayenne)
    1/4 t. celery seed

Put melted butter or some oil on the okra pieces and then roll in the masala powder. Lay out on greased sheet and bake in a convection oven at 400F (start checking for doneness at 10 mins)

These recipes may also be broiled in an oven or done on outdoor grill.
