Ingredients: Milk 300 ml Egg 2 nos Sugar 30 gm Nutmeg a pinch Method: Dissolve 1 tsp sugar for caramel in a strong pan. Bring to boil and allow to colour till golden brown. Pour at once into warm dry pudding moulds and mask evenly all over. Beat the eggs with boiled milk and sugar. Sprinkle over with grated nutmeg.Pour the mixture into prepared moulds. Cover the moulds with greased paper and steam gently for 45 min in a double boiler. Remove,cool and turn on to a dish.Serve either hot or cold.
Banana custard Egg 2 nos Sugar 50 gm Milk 300 ml Vanilla essence few drops Banana 6 nos Red cherries 25 gm For decoration: Egg white 2 nos Sugar 20 gm Gelatine 5 gm Lime 1/2(few drops) Method:Separate egg yolk and white (leave white in fridge) Cream egg yolk and sugar till frothy.Add boiled milk and mix well.Keep a double boiler on gas stove(take water in a big basin and bring to boil) Keep the bowl of eggs and egg mixture in a double boiler and stir till it becomes thick.....coating on the back of wooden spoon(do not overheat..the mixture may curdle) Remove and cool.Add vanilla essence and sliced bananas. Keep refrigerated and serve chilled with cherries and beaten egg white. Egg White Decorationissolve sugar and gelatine in little water and make a thick syrup. When the syrup is ready,remove from fire and cool. Take egg white in a clean bowl and beat stiff. Add gelatine mixture drop by drop,White beating and few drops of lime juice. Put in a piping tray with star nozzle and pipe over the custard with serving.
