Low fat khoya-no stirring

    Hello fellow-foodies,

    Last night i was browsing my one n only copy of Tarla Dalal's Cooking and more magazine. Found this excellent tip to make low fat khoya from skim milk powder. Thought of sharing with you all. I am yet to try this out but sure will for diwali sweets (what with ChitVish's array of sweets with khoya/khova). If you make this do give a feedback..

    Combine 1/4 cup skin milk powder with 1 1/2 tsps of water in a bowl and make a hard dough.

    Wrap the dough in a thin cloth and place in a sieve. Place this sieve on a pan of boiling water and cover it with a lid. Let it steam for 10 minutes, then take it off the flame. Let it cool in the cloth itself.

    Once the dough has cooled completely, remove the cloth and grate the dough to make khoya.

    (the yield of khoya is equal to the quantity of milk powder used)
