Ingredients: for stuffing: button mushrooms - 1cup potatoes boiled n mashed - 2 nos. cottage cheese/paneer (grated) - 1 cup salt - to taste chilli powder - 1/2 tsp coriander leaves - finely chopped - 1 tbsp corn flour - 1 tbsp oil- to deep fry for gravy: tomatoes - 4 onions - 2 finely chopped coriander powder - 1 tbsp curry leaves - 1 stem procedure: 1.remove the stems from the mushrooms carefully. for this curry we need only the heads n wash them 3-4 times with water n keep aside. 2.take a bowl, mix in the mashed potatoes, grated paneer,chilli powder, salt, coriander leaves, n 1 tsp corn flour(for binding) and make it into a good mixture. 3.now take the head of the mushrooms,stuff the mixture into them. 4.in a cup add 1 tbsp cornflour and water. mix well. dip the stuffed mushrooms into the batter and deep fry in the oil. 5.remove them into a plate covered with tissue/absorbant paper so that excess oil gets absorbed into it. for the gravy: 1.take little oil in a pan. 2.to it add curry leaves n onions.fry for a min. 3.now add chopped tomatoes, salt chilli powder, coriander powder and a little water to make into a gravy consistency n cook for 5 min. 4.remove the gravy from fire. put it into a bowl and add the fried mushrooms on top of the curry n serve. 5.tastes good with rice/roti.
