yesterday i bought 2 raw mangoes to make dal but one mango is really very sweet but its still raw.cant throw it in dust bin because its very sweet no tangy taste at all.i know recipes with tangy raw mango and sweet ripe mango but what to do with this raw sweet mango please dont tell me to eat it as it was i hate to eat like that....
Try to serve it as the cut raw mangoes sold on the beach: sprinkle salt and chili powder but add some lime juice to give it some acidity.

How about making Mango Pachadi Kerala style?First cut the mango into small pieces and cook it with a little salt and haldi powder with just enough water.Cook it half way and leave to cool.Next grind 2tbsps of grated coconut 2 green chillies and a 1/4 tsp of mustard seeds all in the grinder like a chutney .Next add 1/2 cup of yogurt to this and blend till smooth .Mix this into the cooked mango pieces and swicth on the stove to medium heat.Keep stirring till few bubbles appear on the sides .Switch off.Do not let it boil as it will curdle.Add more salt if needed.Lastly temper it with mustard seeds,.little jeera, 2 dry red chiilies and curry leaves.This will last in the fridge for 3/4 days too.Hope you'll like it! Another easy recipe is to cut it and cook it with little salt, haldi and chiili powder.After it is cooked soft add jaggery made into thick syrup consistency and boil till it gets thick.Lastly season it with mustard seeds, methi seeds, and curry leaves.This will last even longer in the fridge and can be had with any snack.
Paulina :2thumbsup: Thank you! We make what is called a quick uppinakayi (pickle) like in weddings. cut mango in to small pieces, add turmeric, salt, chilli powder - let it sit a for a couple of hours, season it. Lasts for 3 -4 days - refrigerated.
Or u can make.. Gulamba Just grate the Mango.. Take same quantity of Jaggery,as you the grated mango.. Mix both on Slow flame.. and you have homemade Mango Jam ready
Hi Srama, Kerala wedding 'sadhya' also has a similar quick pickle recipe and its called manga kari. Do you know you can do the same thing with absolutely green apples! I learnt this from Kerala friends while we were posted in Berlin, Germany of all places! It tastes great and the tart tangy apple flavour blends well .BTW you must add some hing / asofoetida powder and methi seeds while seasoning with mustard and whole dry chillies and cury leaves .Here we have the green apple masquerading as our Manga/ mango !! To help it last longer add a wee bit of apple cider vinegar and it can last for weeks in the fridge and is a good accompaniment to our Thiar Sadam/ curd rice .

Hi.You can make raw mango takku if you want.Grate the raw mango along with onions and mix.Add some grated jaggery,salt and chilli powder and mix well.
