take thick green chillies and make slits in them. Mix some ready made pickle masala with salt and lemon juice. Stuff the chillies with this mix. Keep in a bottle and pour some 2-3 tbsp of lemon juice over them. Keep for 1 day . Turn the bottle upside down periodically for the lemon juice to circulate all over the chillies. Use these chillies next day to make bhajias with besan batter. The chillies can be made in larger quantities and kept in the fridge to make instant bhajias . They can be eaten as such also with parathas , khichdi or dal rice.
Nice.I like all the tips shared here. Here's one from my side. If there's no time to make steamed modak, but still want to make one then here's an easy idea. Take 4 white bread slices and remove the sides. Then soak it in water for a few seconds and remove and squeeze out the water. To this bread add 2tbsp of rice flour and salt and knead the dough.Dough for the modak is ready. You can experiment with the filling by using gajar halwa, etc. or even savoury fillings like matar usal, etc.Make modaks as usual and steam.
Homemade soup mix steam some potatoes and mixed vegetables like peas , beans , carrots , sprouts , cabbage , cauliflower etc mash potatoes . Mix in the vegetables , pepper , some sugar , maggi masala cubes and 2-3 tsp butter . Mix well like a dough and make small lemon sized balls . Arrange in a single layer on a plate and freeze them. Once frozen store them in ziploc bags in the freezer . When you need , keep water to boil in a pan . Add 2-3 balls and salt. When the mixture comes to a boil delicious soup is ready in minutes. In this potatoes form the soup base instead of flour as it is more healthy. You can make variations by adding only corn or mushrooms or tomato puree or boiled noodles or any boiled pasta. You can vary the seasonings as you need. You can change the base to white sauce . Combinations are endless. The number of balls to be added depends on the thickness of the soup required. Usually i make them the size required to make 1 big coffee mug. Ikeep it in the mug , fill with water , add salt and mw for 1 min on high . Soup is ready and even my 6 yr old can make for herself when i am at work.
