What to do with beet root leaves?

    Hi all,
    What do u ladies do with the beetroot leaves? Each time I buy a bunch with big stems and leaves, I just don't know what to do them and discard them. Any receipes?

    Beet Greens Dal – Beetroot Leaves dal recipe
    Beetroot Leaves Poriyal |Nithya's Nalabagam | Indian Recipes | Vegetarian

    The good: This food is very low in Saturated Fat and Cholesterol. It is also a good source of Protein, Folate, Pantothenic Acid, Phosphorus and Zinc, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Calcium, Iron, Magnesium, Potassium, Copper and Manganese.

    The bad: This food is very high in Sodium.

    You are welcome Sparks. Usually i also throw them away but next time onwards i will make dal from it and see how it tastes!

    I make poriyal with them. They taste more like red spinach. Have also tried dal with beet leaves.

    Sparks, beet leaves dal is an awesome comfort food with roti..

    Poriyal is is a simple stir fry type. We just put tadka of mustard, urad dal, red chillies, add a 1/4 cup onion, sautéed, and add the chopped beet leaves, stir fry until done. Add less salt and top with fresh grated coconut. Yumm tasty

    It never even occurred to me that I should google for beet leaves! I always threw them away! Thanks for starting the thread Sparks...
