Hi, My DH doesn't like the rasam prepared by me how well i do it.I have tried many ways but he always says it is not eprfect. Can anybody give me the recipe for a tasty rasam please.
First taste his moms rasam, then you will know what he means by good taste Of all the rasams I've tasted over the years, I've noticed couple of common errors: 1) old rasam powder or using sambar powder instead 2) use of more tamarind or less tamarind....changing the sourness level 3) over boiling the rasam.....like keep cooking it on gas even after it has started to give fragrance. 4) boiling rasam after adding the cooked dal/paruppu. After adding dal one should only simmer the rasam and not bring to a full boil. 5) not doing tadka with ghee. 6) finally one must add little freshly ground coriander/pepper pwd (1tsp) and fresh coriander leaf. Hope this helps, rasam and sambhar are not so easy to make after all........it takes practice and a critics tongue to refine the flavors!

Hi chetavani50, I will tell my receipe till now everyone likes my rasam. I will make the rasam powder at home only. Pepper 5 tsp Cumin seed 3 tsp Coriander seed 3 tsp Toor dal 2 tsp Fry without oil and powder little coarse 4 cups of water 1 tomato and small piece of tamarind with salt soak, after that mash everything and keep aside. Heat oil add 1 red whole chilli, curry leaf, rasam powder 2 tsp, asafetida pinch, 2 garlic chopped and turmeric powder pinch (optional red chilli powder pinch) stir and you will get a nice aroma inside and outside your house then pour that mixed water put the fresh coriander leaf that's it allow to boil little, take your vessel from stove your wonderful and tasty yummy rasam ready to serve you can have like that or with rice. Hope everyone likes that rasam.

Thank u all for ur replies.I have a small doubt.My neighbour uses channa dal also in the rasam powder. Can we use it? If so, in what quantity?
