    Dear friends,
    I love to cook for my family and am always on the look out for new and interesting recipes. My husband and kids eagerly look forward to new dishes from me. I feel it will be really good if we can contribute recipes based on particular VEGETABLES. For example, if we could all contribute recipes using potato as the main ingredient for a start, it would be wonderful. Let us start with the magic vegetable potato now. Start contributing good recipes using potatoes. Imagine the collection we will have from all over the world. I will change the vegetable after a week and we can go on............Let us start with POTATO RECIPES.

    Potato Poriyal(South Indian Style)

    Ingredients:

    Potato-3
    Big onion-1
    Chilli powder
    salt
    Turmeric powder
    water
    Tamarind water - 2 tsp
    Gram Masala Powder-1tsp
    oil - 2 Tbsp
    curry leaves
    Chana dal and mustard seeds

    Method:

    1.Cut the potatoes into 2 halves.
    2.Pressure cook it for 2-3 whistles.
    3.Take the potatoes and remove the skin.
    4. cut the potatoes into small pieces.
    5.Take a bowl.Put the potatoes in it.
    6.Add the salt, turmeric powder,tamarind water,chilly powder,Gram masala powder and mix well.
    7.Take a kadai , pour oil and add chanadal, mustard seeds.
    8.Let it crackle.Add curry leaves and onion.
    9.Let it cook until the onion turns into golden brown.
    10.Finally add the potato mix.Let it cook for 10 mins.
    11.Potato poriyal is ready to serve.

    POTATO GRAVY IN CORIANDER SAUCE
    -------------------------------------
    INGREDIENTS:
    1 Kg of Baby Potatoes
    3 tbsp of Tamarind extract
    400 gms Tomatoes
    1/2 tsp Turmeric powder
    2 sprigs of Curry leaves
    Salt as per taste
    1/2 tsp Sugar
    3 tbsp Oil
    6 to 7 sprigs of Coriander leaves

    GRIND TO PASTE:
    1 tbsp Coriander seeds
    1 tbsp of Cumin seeds
    4 Garlic Cloves
    1 Medium sized Onion
    3 - 4 (Guntur and Byadagi chillies fried with little oil)/
    Or Substitute with 1/2 tbsp of Red Chilli powder.
    METHOD:
    Cook the Baby potatoes in a pressure cooker with enough water for just 2 whistles (do not over cook it, so check out with your pressure cooker and reduce it to one or two whistles), drain the water, pour some cold water on top of it and allow it cool it.
    Next Grind everything under Grind to paste and keep it aside.
    Peel the skin of the Baby potatoes prick them with a fork lightly on two or three sides
    Take a large pan, heat oil when it is hot add the ground paste, Pureed Tomatoes, curry leaves, turmeric powder, Tamarind extract and allow it cook until oil starts separating out.
    Now add required quantity of salt and sugar, mix well then add the potatoes mix well, add 1/4 cup of water, cover it with a lid and allow it cook for few more minutes in a very low to medium flame.
    Just keep an eye that they didn't get stuck to the bottom of the pan .
    Once it is well cooked and the potatoes have absorbed the masala well, Garnish with fresh coriander leaves and serve it with pulkas, chapatis or may be with rice.

    spicy potato fry

    potato-1

    mustard seeds
    chilly powder
    chat masala

    method :
    Boil the potato when u cook the rice it self. it will save time and gas no need to cook separately. then peel the skin and cut it into pieces. heat oil and add mustard to temper , then add potato , salt , chilli powder, and chat masala.. fry for two mins.. yummy potato fry will be ready..

    simple but tastes so good.

    Hi, I am posting the halwa made with POTATO:

    POTATO HALWA:

    Ingrediants:

    • Potato: 300 gm (4-5 medium size)
    • Sugar - 100 gm (1/2 cup)
    • Ghee - 2 table spoon
    • Milk - 1 cup
    • Raisins - 20-25 (washed)
    • Cashew nuts - 15-20 (chopped)
    • Cardamom - 5-6 (grounded)
    • Almonds - 6-7 (chopped)
    Method:
    Boil potatoes, peel and mash them. Heat ghee in a non-stick pan and add mashed potatoes gradually. Continue stirring it at medium high heat. When potatoes start to change color into golden, add sugar and mix. You may use less or more amount of sugar to your taste. Allow sugar to incorporate completely while stirring. Remove from heat and add dry nuts. Serve Warm.
