plz share recipe for Soft Roti by hand with handmade dough

    how oil do you suggest? for example- one cup of wheat flour, how much oil

    Thanks for the info. I have also heard that using luke warm water and a tablespoon of curd makes rotis soft. Covering the dough with a damp cloth for half an hour also makes roti soft.

    Rotis are soft due to the moisture content. This is what I do.

    1. take whole wheat atta. If you feel atta is not fine enough. dry grind it once again.
    2. add salt to taste and mix it dry.
    3. add 3 to 4 tbsp of oil and mix it to the atta well.
    4. Add water to it and keep kneading it.
    5. try adding as muchas water as you can while kneading.
    6. Knead it for 5 min. If you feel the atta is too sticky to roll then add a few tbsp of flour. After few times, you will get the ratio correct. Add a bit of oil and smoothen it out. This will leave you hands clean and make the dough less sticky and it will turn in to a soft dough ball. leave covered for 20 min.
    7. Dust using maida so that the flour (though a bit sticky) wont stick to the rolling plate.
    8. Keep pan on med heat.
    9. Heat both sides on pan.
    10. When a bit cooked put it direclty on flame for cooking. It would puff up. Puffing up happens due to the water content expanding. So thats why you need to have enough water in the dough.
    11. Remove it and keep it covered in the plate. So the moisture does not escape.
    12. When things go a bit wrong. I sprinkle few drops of boiled water on the roti when cooking to add to mositure.

    I have noted down all the valuable points(Till yesterday i was making the normal-good rotis).
    I going to make the best Pulkaas.(rotis).

    If you have a food processor then use it knead the chapati dough.. Kneads perfect to make soft/ fluffy chapatis.
    Try Sujata aata too. It is really good.
