This kurma is very easy to prepare and goes well with chapati and dosa and can be prepared in less than 20 mins max (including the chopping effort!). Take a pressure cooker, add 1 chopped onion (this chopping need not be perfect as everything is going to cooked in the cooker), 2 tomatoes, 1 chow chow, 2 carrots, 2 big potatoes, and turnip (if you have) and 2 green chillies slit, turmeric powder, chilly powder 1 spoon and water and pressure cook till 3 to 4 whistles. Meanwhile grind coconut, sombu (saunf) - one spoon , 5 cashewnuts, 3 almonds, and 3 green chillies(already we have put chilli powder and chillies in cooker) and make it a fine paste. (If almonds or cashews are not there you can add odacha kadalai, this will give that mass) Open the cooker after pressure subsides mash the vegetables with a ladle and add this mixture and salt and (garam masala half spoon optional) let it boil for some more time. Add freshly chopped coriander leaves and serve with soft chapatis!!!
Hi Coffeelover,amunique and subhaganesh, Do try it.!!! It will be like the kurma given in hotels with chapathi MAke sure the ground paste which we are adding is lesser as compared to the vegetables boiled in the cooker.
Can someone translate chow chow and odacha kadalai for me? (FYI chow chow in American cooking is a very tasty mixed veg pickle.)
