Hi all, I thought i had posted one before, cannot find it now. So posting it. Soup base I make: 1. Onions 2. Tomatoes 3. Garlic 4. Ginger (optional) 5. Vegetable Stock 6. Olive oil Heat little olive oil , saute onions till soft, then add tomatoes, garlic I add ginger as it is good for digestion. Add the vegetable stock Cool it and then grind it with some water I store this in fridge - for upto 7 days or sometimes I make large batches and freeze them using ice cube trays. Once they are frozen, they are cubes and put them in ziploc and keep in freezer. This is quite handy
Spinach soup This I have atleast once a week and it is quite simple with the base being ready Wash, cut the spinach and boil it with least water. To that add, one potato peeled and cut into cubes. Once the spinach is half cooked, I add the Soup base to bring to a gravy consistency. Here optional you can add milk and cook on low flame for 5 mins. Cool and then puree. The only salt intake in this soup is the Vegetable stock which contains traces of salt. Else I do not add any salt to it. But it tastes yummy with some lime squeezed just before eating. I also garnish coriander
Cabbage Soup This again is once a week . Cut cabbage, wash and then steam it in pressure cooker with only needed water. Do not throw the water in that. After steaming, cool it and puree this. Transfrer to a pan, add soup base and cook for 5-10 mins. Eat this hot and again squeeze lime for a tangy taste.
Hi Ptamil, Lovely soup recipes. We always tend to run out of soups, or get fed up of the ones we make. Your posts have made me tempt to make soups again. Thank you.
