Using blender to prepare curry base?

    I heard so many different opinions about using blender or hand blender while cooking curry base. It's mentioned in most of cookery books, but my family members (MIL or aunties) never use it. I always used to fry onions for so long until they become really soft and I can grind them with potato masher. But this way the paste seems thicker and not so smooth.
    So what are your views on this subject? Do you use blender to prepare your curry or know any other good ways of grinding onions? How does it change the consistency of the paste? Please share your secret recipes...

    Hi Chandni,

    I use blender for d curry... But it really depends on individuals whether you want to blend the curry or keep it whole. In some curries grinding might not b the good option according to taste.
    but grinding is all time option to blend up the curry

    for thickening of curry, use cashew for sweet curries, use mesh potato at the end of it if u feel the curry needs it.
