Eggless Cooker cake

    Hi Friends,
    I'm a vegetarian, and had long wanted to try baking eggless cake in a cooker.
    I tried the same this weekend and it came out decently well. My little one liked it too!
    Heres the recipe I tried. Please share your suggestions too, if any!

    Ingredients:
    Maida Flour - 1.5 cups
    Sugar (Powdered) - 1cup (You can add little more too if you like it very sweet)
    Baking powder - 1.5 tsp
    Baking Soda - 1/2 tsp
    Milk- as required
    Butter - 200 gms
    vannila essence - 2 tsp

    Procedure:

    1) First mix the maida flour, Baking powder and baking soda, and sieve them together 3 times.
    2) In a pan, mix butter and the powdered sugar and knead them together without lumps till it becomes fluffy (Add more butter if needed).
    3) To the butter-sugar mix, add the sifted flour mixture, and add milk to form a paste of pouring consistency (similar to dosa batter). There should not be any lumps.
    4) Add 2 tsp of Vannila essence and mix well.

    In a pressure pan, pour water 1.5 cups of water. Once it starts getting hot, place a perforated plate on the pressure pan. Pour the cake mix in a greased baking tray (I used a normal shallow vessel greased with little oil and flour), and place it over the perforated plate in the pressure pan. Close the lid, and let it steam for 30-40 mins. DO NOT put the whistle. After 30-40 mins, insert a knife into the cake to see if it comes out clean. Once done, let the cake cool and later invert the tray over a plate and tap it gently. You can decorate it with icing sugar.:thumbsup

    hi shobna, thank you for sharing. I just saved it.
    The recipe looks simple. So the method is like steaming, isn't it?
    I was in search of eggless vanilla cake recipe and lucky me found yours. Will try soon.

    is baking powder and baking soda is different

    HI sudha,

    Yes baking powder n baking soda are different. baking soda means soda bi-carbonate. which we use in making bajjis etc.
