BRINJ-KAAJU CURRY:: Ingredients: Brinjals – 5(small) kaaju - 10 Onions – 2(medium) Red chillies - 3 Cinnamon - 2'' stick Cloves – 2 Coriander Haldi - 1/4 sp Salt(as per taste) Refined oil Procedure: Ø Boil Kaaju,Chopped Onions,Redchillies,Cinnamon,Cloves,Haldi,Salt lightly (~2 minutes) in water and Grind them into smooth paste. Ø Deep fry brinjal pieces(long) in oil and keep them aside. Ø In a kadai, put 3 spoons of oil then add the masala paste prepared. Ø Fry it for 3 minutes without lid.Then add fried brinjals .Mix them well and cook for few minutes with lid. Ø Garnish with coriander.Serve hot with rice or roti. TIPS:: Chopped Brinjal pieces (raw) must be immediately added to the water mixed with little bit salt .
Wow, sounds delicious Though the pity is I get the big Aubergines here and have not eaten our brinjals for 4 years now :-( Also my DH is not favorite of aubergines or brinjals, so I have not used them at all But your recipe looks yummy, thanks for sharing
Hi IL's, My next fav recipe ---- TOMATO MASALA WITH PAPAD:: Ingredients: · Tomatoes – 2(Big) · Onion Paste-4 sp · Onion Chopped- 2 sp · Garlic Paste-1/2 sp · Fried Papads-6(small size) · Green chilli Paste-1/4 sp · Methi -1/4 sp · Mustard seeds-1/4 sp · Coriander leaves crushed-2 sp · Red chilli Powder-1/ 4sp · Salt(as per taste) · Oil-3 sp Procedure: Ø In a kadai,add oil then add mustard seeds,methi after that add curry leaves,Garlic paste,Onion paste,Greenchilli paste,Redchilli powder.Mix well and fry for 2 min. Ø Then add finely chopped tomatoes,Salt.Cook well with 3 spoons of water . Ø Place this gravy in the mid of papads then garnish with coriander and onion pieces.Serve immediately as soon as u prepare.
RADISH CHUTNEY:: Ingredients: · Radish – 1 · Onion -1 · Tomato – 1 · DryRedchillies – 5 or 6 · Jeera – 1 sp · Mustard seeds -1 sp · Methi seeds – ¼ sp · Dhania – 2 sp · Curry leaves · Salt Preparation: Ø In a pan, put 1 sp oil then add radish pieces.Fry for 5 to 7 min and keep aside. Ø Put 1 sp of oil in the same pan then add onion pieces,tomato pieces and fry for 2 min.keep aside. Ø Put 2 sp of oil and add red chillies dried,dhania,mustard seeds,jeers,methi seeds,curry leaves fry for a minute.Allow to cool then blend them in a mixie without adding water as a powder.Then add fried adish,onion,tomato pieces.Blend well as a fine paste with a little bit water. Ø Seasoning:- In 1 sp of oil add mustard seeds ,above prepared paste,salt.mix well and cook for a minute.Serve hot with rice.
