Hi All, It is absolutely delicious and also nutritious and healthy. These are some of my favorite lassi recipes for keeping cool on those humid afternoons. SWEET LASSI (Serves 4) ************************* Ingredients: ************* Plain Yogurt - 21/2Cups Cold Water - 1Cup Sugar - 4-5 tbsp (to taste) finely chopped pistachios to decorate Crushed Ice Method ******** Pour Yogurt , Water , Sugar, and Ice in to a blender. Blend on a high Setting for 1min. Pour the lassi into tall glasses . Sprinkle with chopped pistachios and Serve . ***************************************** MANGO LASSI (Serves 4) ************************ Ingredients: ************ Fresh Mangoes - 2 Plain Yogurt - 4 Cups Cold Water - 1Cup Sugar 8-10tbsp (to taste) Pinch of Saffron Crushed Ice Method ******** Place the peeled, seeded and chopped mango in a blender. Add the yogurt, water, sugar Saffron . Blend it until smooth and frothy. To serve fill glasses with crushed ice, then pour lassi. *********************************************** Savory Lassi with Cucumber, Roasted Fennel Seed and Thai Basil ********************************************************************** (Serves 3) Ingredients: ********** Fennel seeds -1tbsp Plain yoghurt -1 Cup Cold water - 1/2 Cup Cucumber, peeled, seeded and cut into chunks - 1-1/2 Cups Salt - A Pinch Thai or other basil leaves - 6 Sprigs basil for garnish, (if desired ) - 3 Method: ****** Roast the fennel seeds. Heat a small cast iron skillet over a medium flame. When the skillet is hot, add the fennel seed and toast, stirring frequently, until it begins to change color, turning yellowish-brown, about 3 minutes. Do not let the fennel burn. Pour it into a spice grinder and let cool completely. Then grind to a powder, pour into a small jar, and set aside. In the jar of a blender, combine the yoghurt, water and cucumber. Blend until smooth and frothy. Add ice, salt and ¼ teaspoon roasted fennel powder. Process until the ice is crushed . Taste and adjust seasonings if necessary. Add the Thai basil leaves and blend until frothy. Pour into tall glasses and garnish with sprigs of basil, if desired. Serve. ********************************************************* Orange Lassi (Serves 4) ******************** Ingredients: ********** Oranges -2 (peeled) Sugar - 2 tbsp Cinnamon Powder - 1/4 tsp Plain Yogurt - 2 Cups Crushed Ice Method: ******** In a blender Combine the oranges , yogurt, Sugar, cinnamon powder and crused ice and blend well. Serve chilled in tall glasses. ******************************************************* Fruit Lassi (serves 4) ********************** Ingredients: ************** Bananas - 5 Cardamom (grounded) - 1/2 tsp Plain Yogurt - 2 Cup Ice Cold Water - 1 Cup Rose Water - 1 tsp Soft Mangoes - 2 Cup Milk - 1 cup Almonds for decorating Method ******** Combine all the ingredients in a blender (except almonds) until smooth. Serve with ice cubes and sprinkle with almonds . ************************************************************************ Ginger Lassi (serves 4) ************************ Ingredients: ************* Cumin Powder - 1/2 tsp Ginger Powder - 1 tsp Plain Yogurt - 2 Cups Sugar - 1/2 Cup Chilled Water - 2 Cups Method : ********* Mix water , plain yogurt ,ginger powder, and sugar in a blender until thoroughly blended.
