Hi, I prepare a peanut chikki y'day for the first time.This is served in our house mostly during winters after lunch and b'fast or the jar is just left on the dinning table to help ourselves whenever we felt like eating it. Ingredients: 1 cup - Roasted Peanut, 1.5 cup - Grated Jaggery, 1 tbsp - Ghee. Method: First roast the peanuts,remove the skin and split them with an rolling pin, Later take a khadai and put it on stove on medium flame and put over the grated jaggery and keep stirring as turns into a syrup,stir it for 3-5min To check it has reached a required level just drop a small drop of syrup into a some water and look for a the syrup to form a clear ball or pearl in the water,this it the right consistency to put in the peanuts and ghee. Drop in the peanuts and ghee while stirring the syrup. Pour this mixture into a greased plate or tray(grease it with ghee) and spread immediately with a rolling pin,leave it to cool a bit say 2-3min and cut into desired shapes,if not done it is difficult to make cubes out of it once its completely cooled. If the peaces doesnt leave the surface tap the tray from behind or just warm the tray slightly to allow the pieces leave the tray. That's it, it takes less than 15-20 min to prepare. many prepare it with sugar instead of jaggery,Its more nutritious make with jaggery. i have attached the pic of my preparations sudha
