Aloo imliwale(with tamarind)

    5 medium potatoes
    2green chillies
    1-1/2 tsp tamarind paste
    2tsp sugar
    2 tsp oil
    1 tsp mustard seeds
    1/2 tsp red chilli powder
    1/2 tsp turmeric powder
    1 tsp coriander powder
    1 tsp salt

    garnish: A small bunch coriander leaves.

    preparation: peel, wash and cut the potatoes into more or less even dice. Wash and slit the green chillies. Put the tamarind paste into a small bowl with the sugar , and thin down with a little water. Wash and coarsely chop the coriander leaves.

    method: heat the oil. Lower the heat and put in the musterd seeds and cover till its spluttering subsides. Add the potatoes , spice powders, and salt and mix them well. Add 1 cup water bring up to the boil till the potatoes are done. Add the green chilies and the tamarind sugar mixture and cook for a few minutes till the water is dried. Garnish with the coriander leaves.
