Same tea leaves, same amount of leaves and water, same soaking time, but different temperature. 1st one is at higher temperature. 1 tea spoon of leaves. At 89’C. And 2nd one is lower temperature. 1 tea spoon of leaves. At 74’C. Then see the difference in the next picture. Right one is at 74’C. Left one is at 89’C. Dark one tastes bitter. Lighter one tastes sweeter. Do you see this? Even same tea leaves, same amount of leaves and water and same soaking time, you can change the taste of green tea. Remember that water temperature is one key factor of the taste. Water temperature is important factor to set the taste of green tea. As the temperature goes up, the green tea tastes bitter. Since catechine tend to diffuse water in higher temperature. I explain my super-easy adjustment method. I actually did experiment as you see the next picture. Boiled water and 2 cups. When you boil water, the temperature reaches to 90~100’C (190~210’F). Then pour the hot water to 1st cup. The temperature drops 10’C (18’F). Now it’s 81’C (178’F) Pour the hot water in the 1st cup to the 2nd cup. The temperature drops 8’C (15’F). Now it’s 73’C (163’F). It’s good temperature to make sweet green tea. Did you get the change of water temperature? Water temperature drops 8~10’C (15~18’F) when you transfer the water to one cup another. This is the simplest method to control the temperature without a thermometer. You can use the boiling water if you like bitter and strong taste. But it’s good to know how to change the taste of green tea. The bitter taste green tea contains a lot of caffeine. It does not suit for the beverage before going to bed. In my case, I make green tea with nearly boiling water in morning since I need to wake up. And I make green tea with water cooled down by using this method at night since I don’t want a lot of caffeine. I will show you how the temperature affects the taste next time.
