Ingredients: 1kg chicken mince 1 bunch spring onions, chopped 2 small onions, finely chopped 2 green chillies, finely chopped medium ginger, peeled and grated 1 clove garlic, crushed 2ml peri peri 30ml chopped coriander leaves salt and pepper to taste 2 eggs 3 slices stale bread, soaked in water seasoned flour 2 eggs, beaten dry breadcrumbs Procedure: 1. Add all the ingredients together in a bowl. Beat 2 eggs and add slowly to the mince mixture. 2. Squeeze out the water fromt he bread and add bread to the mixture. If the mixture is still too soft add breadcrumbs, a little at a time. 3. Form the mixture into balls and shape into patties. Freeze for 30 minutes. 4. When slightly hard, dip the patties first in the flour, then into the eggs and lastly into th e breadcrumbs. Bake, shallow-fry or grill the patties. 5. Makes 20
