Mangalore (Kundapur) chicken curry

    Mangalore(Kundapur) Chicken Curry is one of the versatile coastal curies, which goes very well with almost anything, neer dosas, idlis, sanna. Mangalorean chicken curry with rice crepes (Kori rotti ) is a heavenly dish. This is my version of mangalorean chicken curry, Wu be happy to hear your comments and suggestions.

    MANGALOREAN (KUNDAPUR) CHICKEN CURRY
    =================================

    Ingredients
    -----------
    chicken 1 kg
    Turmeric pulp 2 tbsp

    Marination
    ----------
    Ginger-garlic paste 2-3 tbsp
    lemon 1
    turmeric pwd 1/4 tsp
    salt

    Masala Paste
    -------------
    Scraped coconut 1 1/2 cups
    Coriander seeds 1 1/2 tbsp
    Dried Red Chillies 8-10
    Cumin seeds 1 tsp
    Peppercorn 1 tsp
    Fenugreek seeds 1/4 tsp
    Onion 1 (chopped)


    Seasoning
    ---------
    Ghee 3 tbsp
    Onions 2 chopped finely
    Mustard Seeds 1/2 tsp
    Curry leaves 8-10
    Garlic 8-10 cloves, chopped finely

    Garnishing
    ----------
    Coriander leaves 1/2 bunch, chopped finely
    Onion 1/2 chopped finely
    Ghee 2 tsp


    Method
    ======

    1. Marinate the chicken with ginger garlic paste, salt, turmeric and lemon juice and keep it aside for 1 hour.

    2. Dry roast, all the ingredients of the masala paste in 2 tsps oil and grind them to a paste using little water.

    3. Heat ghee in a thick bottomed pan. Add mustard seeds, curry leaves, and when these crackle, add garlic and chopped onions. Saute it for 5 mins on a medium heat.

    4. Add the masala paste and saute it till the raw smell goes and it gives a good aroma. Add the marinated chicken , about 1 cup of water , cover it and cook it for 10 mins.

    5. Add the coconut milk , and tamarind pulp and cook it till the chicken becomes tender. Turn off the heat.

    6. In another pan, heat the ghee and add the onions (as mentioned in the seasoning section) saute till brown and add it to the chicken curry. Close the lid of the chicken curry immediately. (It seals the aroma of the curry. This is a tip from my mother) . After about a minute, you can garnish with coriander leaves. (optional)

    You can enjoy it with rice or idlis.
