Default What is the use of adding saffron in cooking receipe?

hi
do you use saffron in all your cooking receipes...especially in non veg receipes..
what difference does it make with adding/not adding kumkum...i know its a expensive one to buy

You can use saffron for biriyani,to give that nice yellowish color. I mostly add saffron to sweet dishes like payasam and kheer. It gives that light fragrance to the dishes. But i think it is nor that necessary expect for the richness!!!

we do use it for biryanis.. a couple strands makes a difference.. and also use it for desserts and stuff..

Saffron is for flavour and colour. Most North Indian dishes have saffron. Saffron is used for occasions and marriage.

It is an high end preference. Also used when you want to give a party to guests, relatives. If you ask me I don't use it. I am still in look of genuine saffron, I heard not all saffron is genuinely available in stores. Some of the strands are just coloured I heard from someone don't know how true is it. Depends on which dish you are making, if the recipe says add saffron, then the dish will be saffron flavoured.

Saffron helps in flavored milk, sweet pasteries, biryanis it enhances the flavour.

You can use in biriyani and sweets. make sure u put only 1-2 strands. I once put too much without knowing and the whole dish tasted like saffron only.
