Default question on making fish fry

hi
i tried to do frish fry..
but ended up having frish pulusu and that too,too watery
please suggest what could have been the best way, that would have avoided the above..

Raja; how do you marinate fish? Do you add water?
How I marinate is ; make a paste of red chilli powder,turmeric powder, gg paste, pepper powder and salt. The water from gg paste alone is suffice. If you need a thick coating, you can grind little red onion,garli,ginger, red chilli (dry), pepper and salt. Then marinate it and fry. The coating will be more crisp.

Mix Chilli powder,turmeric,pepper powder,salt and little lemon juice with water..It should be slightly loose than dosa batter ..i.e., See to that the mixture is not very thick nor watery..Marinate well and keep it in fridge for few hours....Heat a Flat tawa ..Spread 1 tea spoon of oil..Reduce flame to low flame and spread the slices..Gradually spread oil in the corners like we do for dosa...Do not pour oil at a stretch nor be stingy ..Turn the sides ..alternatively then and then..

This what I do - Mix chilli powder, dhaniya powder, cumin powder, turmeric salt and make a dry mix. Then wash and pat the fish with tissue paper and apply this mix with a little lime juice.
leave for 2 hours and then shallow fry in tawa.
