| 1. Does anyone know how to make egg curry/kurma not the usual yellowish colored one but in restaurants I've eaten dark gravy... Also this gravy is not thick & its a brown gravy with outside of the eggs actually having a coating of that color with masala as though the eggs were coated & fried. This is the best I can explain about that gravy. If anyone knows the recipe please post it. 2. Another recipe with lamb / chicken similarly with brown gravy is commonly served in restaurants both in Madras & in Indian restaurants in US... Anyone know that one? It doesn't have the same ingrdients as the egg recipe though. -Lavanya. |

| Hi Lavanya, The egg curry you tasted , did it have onion paste as the base or ground coconut ? If it is coconut , then coconut would have been roasted to a brown colour and then ground to a paste. Some also fry the hard boiled eggs first to a golden colour and then add to the gravy. Give me sometime. I just got in today from kerala. I'll post the recipes in a day or two. Chettinad chicken/ mutton kuzhambu is the one I trhink you are asking about. I'll post that a lso. Ok. Please do bear with me for sometime. Latha |

| Thanks Latha... I don't think it had coconut... gravy was thinner than that so my guess is onions. Also can you tell me the masala to fry the eggs with, because the fried eggs looked like they were coated lightly... Thanks once again. Hope you had a good trip. L. |

| Hi Lavanya, It would have been onion and tomato paste . Ie small onions and tomato ground together with chilli powder, coriander powder and garam masala powder. Add the usual ginger-garlic paste and try it out. I think you'll get your gravy. Heat oil in pan, put in the shelled hard boiled eggs (just slightly slit) , into the pan and fry a little. The colour will change slightly. Remove from the pan and add it to the boiling gravy. Simmer for two to three minutes and remove. Then the eggs will look slightly coated with masala and will take the colour of the gravy. Latha |
