| Muttai (Egg) Thokku: Easy side dish made in less than 25 mins. Ingredients: Eggs - 2 Sambar powder - 4 tsp Mustard seeds - 1/2 tsp Salt Oil Preparation: Boil 2 eggs, remove the shell and keep aside. In a small bowl put the sambar powder, salt and 1 cup of water.Mix and keep aside. In a kadai heat 1 tsp of oil and splutter mustard seeds. Then add the sambar powder mixture to it.Let it boil well till all the water drains. Keep an eye on it, so that it not sticks or burns. Once the water completeley drains, reduce the flame; add 2 more tsps of oil and kindle it well; let it saute for 6 mins;keep kindling then and then; Again add 1 tsp of oil and saute well for 6 mins. The sambar powder color should turn brownish and form like a paste. Add more oil whenever it sticks; Now add the boiled whole egg in the mix and saute for 2 mins in low flame; the paste will wrap up the egg easily in few mins; If it is not moist enough to wrap up sprinkle little water; saute for few seconds and remove from fire. Note: Using sambar powder for this recipe adds more flavour and taste, if not add plain chilli powder and plain coriander powder in the ratio of 1:2. After adding egg do not go away from the stove coz the egg may attimes splutter and mess the kitchen; cook in sim after adding egg and remove after 2-3 mins. Excellent side dish; Goes well with plain rice or as side dish for sambar rice. Picture of Muttai (Egg) Thokku |

| Hi All, This is an egg curry with a difference , yea i mean it :). I have seen recipes here that call for boiled eggs or scrambled ones. I am giving something a bit different. Egg Curry ( using steamed eggs ! ) This is for 4 people. Eggs : 4 Nos Milk - 1 tsp Onion - 1 small, grated or made into a paste. Tomato Paste or Puree - 1 cup (if homemade use 1 cup, use 1/2 cup if store bought as its very concentrated. Ginger - 1 inch piece grated. Coriander powder - 1 tsp Turmeric powder - 1/2 tsp Garam masala powder - a pinch Green peas - 1/2 cup Coriander leaves - 1 chopped bunch Oil for cooking Salt and chilli powder as per taste. Instructions How to steam the eggs : Break the eggs in a deep bottomed bowl greased with little oil on all sides. Add salt and milk to it. Whisk the eggs, salt and milk till it becomes frothy, about a minute. In a pressure cooker, add 1 cup water. Put the seperator in the cooker and on it place the bowl containg egg mixture. Cover the cooker with lid but do not put the weight. Steam the eggs on a high. Once steam starts escaping , keep it on high for 6-8 mins and then lower the flame to sim and let the eggs steam for another 15 mins. (If you have made idly , just follow the same process for this too). Remember : the eggs should not touch the water . The bowl containing the egg should be deep enough as the eggs will rise on steaming and they should not fall over from the bowl. Take the bowl out of the cooker. Let it cool and then cut the steamed egg into sqaures/pieces . Overturn the bowl and take the pieces out. How to make the curry : In a pan, add 2 tsp oil for frying. Heat the oil and add the egg pieces . Lightly fry them to a golder colour and remove. In the same pan, to the oil add the grated ginger and saute till it becomes golden. Then add the onion. Fry the onion. Once it becomes golden brown, add the coriander, turmeric and chill powder and fry for a minute. Add the tomato puree and peas and mix all the ingredients. Fry all of it for 3-4 min till the water evaporates. Add 1/2 cup water and mix it in. Add the egg pieces to this mixture. Mix in the eggs with the cooked spice mixture and let in simmer on low flame for a minute or two. Next, Add 1 cup of water to this.Add salt as per taste. Let it come to a boil on high flame and then add garam masala and let in simmer for 3-4 mins on low flame. Take it off from the fire and garnish with chopped coriander. Enjoy with pooris or parathas or chapatis !!! |

| Egg kuzhambu: Hello friends, mostly we do egg kuzhambu with boiled eggs. This kuzhambu is entirely different and spicy too. You can try this for a different taste. Ingredients: Eggs - 4 small onions - chopped Tomato - 1 big Chilli powder - 2 tsps coriander powder - 2 tsps saunf powder - (slightly roast the saunf and dry grind) - 1 tsp coconut grated - 1/2 cup salt to taste oil as you need. Method: First grind coconut to a fine paste and grind tomato too. Take a kadai, add chilli powder, coriander and saunf powders, mix with water and keep over the flame, add a little cut onions to it. When the mixture boils, add the ground coconut paste and stir well. Let it get cooked till the raw smell leaves. Break and pour the egg over the mixture. do not stir. Simmer the flame and close with a lid. Turn the eggs carefully after some time and let it cook well. Heat a pan seperately, add oil, mustard and urad dal,add chopped onions and curry leaves, saute well till light brown and add it hot to the kuzhambu. serve hot with white rice or chapathi. You can add drumstick pieces to the kuzhambu , which gives a very different smell and taste.
