Default Potato Raita

Let us share varieties of raitas in this message thread...

I recently tried this potato raita for Veg
Pulav and it was a big hit!








Ingredients:

2 medium sized grated boiled Potatoes Jeera - 1 pinch
Oil - ½ spoon
Green Chilly - 1 small Hing - 1 pinch
Curry leaves
Yoghurt - 4 cups
Sugar - ½ spoon
Salt - as per taste
Red chilli powder - 1 pinch
Black pepper powder - 1 pinch
















Method:
Mix the boiled grated potatoes with yoghurt, sugar and salt. In a kadai heat oil. Fry jeera till brown. Add green chilly, curry leaves and asafoetida. Add it to the potatoes. Garnish with red chilli powder and black pepper powder.
This raita will taste yummy with variety rices/parathas!

Default Palak- kaddu raita

Palak-kaddu Raita



Palak , roughly chopped 2cups

Kaddu cut into small cubes 1 cup (yellow parangikkai)

Black salt ½ tsp

Roasted jeera powder ½ tsp

Chilli powder 1 tsp

Fresh,thick curds 2 cups

Salt &sugar to taste.



Clean & roughly chop palak leaves.

Cut kaddu into small cubes and steam for 5 mins.

Heat 1 tsp oil or ghee & lightly fry the chopped palak leaves , till they shrink well.

Mix both & lightly mash with a potato masher till they become homogeneous.

To the above , add spices , salt , sugar & curds

Mix well & chill.

hi,

while preparing raitas, grind some coriander leaves, mint leaves and green chillies, add this to raita. this will give additional taste to raita.

Default Ladies finger raita

Hi friends

Here is the recipe of ladies finger raita which is good for all rice dishes.

Ingredients
1. Ladies finger -1/4kg
2. Mustard seeds -1tsp
3. Urad dal -1tsp
4. Green chillies -2
5. OIl
6. Salt
7. Curds - 2cups
8. Coriander leaves

Method

In a kadai add 1tsp of oil and add mustard seeds, when it pops up add urad dal when it turns golden borwn colour add finely chopped ladies finger and salt and mix well. Deep fry the ladies finger adding oil little by little.

Mix the deep fried ladies finger in curd just before serving. Grind the greenchillies in the mixer and add to the curd. Also add finely chopped coriander leaves and slat to the curd.

Instead of green chillies you can even add pepper powder(1/2tsp) instead of green chillies.

i tried your potato raitha receipe yesterday and it was simple to make and really yummy. i tried with mulagootal. just wanted to tell u abt it.

Default carrot raita

Grate carrot and do seasoning, mix. Take small piece of ginger, green chillies, little amt of coconut and grind them nicely. Mix everything with curd(sour curd is preferable) and yummy raita is ready!!

Smile Carrot And Peanut Raita

FRIENDS, TRY THIS ONE OUT!!! ITS VERY SIMPLE AND VERY DELICIOUS AND NUTRITIOUS TOO.

INGREDIENTS:

2 CARROTS
1/2 CUP ROASTED SALTED PEANUTS
1 SMALL CLOVE GARLIC, CHOPPED
1 FRESH GREEN CHILLY, SEEDED AND CHOPPED
1/4 TSP SALT
2/3 CUP YOGURT
1/2 TSP SUGAR
1 TBSP DHANIA LEAVES

PEEL AND GRATE CARROTS COARSELY. CRUSH PEANUTS WITH A ROLLING PIN. MIX GARLIC, CHILLI PEPPER, AND SALT TO A PULP. BEAT YOGURT TILL SMOOTH AND GARLIC MIXTURE. ADD CARROTS, PEANUTS, SUGAR AND DHANIA LEAVES. MIX THOROUGHLY.

IT ALSO TASTES GOOD WITH PAKORAS.

Wink for curd lovers

curd- 2 cup,
onion half or shallots 4 or 5 chopped finely,
cucumber - 1 peeled and cut into very thin pieces,
curry leaves -a few,
ginger - 1 small piece finely chopped,
tomato - half chopped finely,
green chillies or dry chilly - two,
salt according to taste.


heat pan, pour little coconut oil, add 1 teaspoon mustard seeds, let it splutter.
add green chillies,onion,curry leaves, ginger and fry for one minute. add tomato, cucumber and salt. fry for one minute and take from fire. add curd beaten with little water.
good with rice.
