India cooking in the US: Making soft chappatis with store bought wheat flour

    Dear friends,

    I make chapattis with the whole wheat flour availible in stores such as walmart and it comes out very soft. Do not need to get atta from Indian store anymore.
    Here is the procedure I use

    Put flour in mixing bowl (very useful)--I use around 16 oz
    Add salt to taste
    Add 1 tsp ghee
    Mix
    Put timer for 10 minutes
    Add water gradually and start kneading.
    Ensure that there are no lumps in the dough.
    Kneading for ~ 10 mins is what changes the texture and results.

    Even i use to buy the flour from walmart and it comes out good.

    Though i get good chapathi with Indian store atta,i would like to give a try.In which aisle of walmart can i find this?What is the price?

    Hi ,

    even i make rotis with whole wheat flour that i generally buy from american grocery stores. I also add a couple of spoons of soy flour for additional nutrition and softness. Using warm water for kneading is another key factor for perfect soft rotis.

    Hi Supriya,
    Unfortunately I do not remember how much we paid for the whole wheat flour. Since the Indian store is not close by (within 5 miles), I am constantly trying to figure out how to make Indian food with locally available groceries. I was plesantly surprised that I could get good results with locally available wheat flour. I buy from a farmers market.

    Pav_3: I have some soy flour at home that I recently purchased. I will mix it with the whole what flour tonight. That is a great tip

    Do you guys make phulkas or rotis? Do you use the tava for intial cooking and then the grill device for the puffing?
