I'm glad you like the look of the vegetable stew - I'm thinking the beetroot might be a good addition if you're making it for Valentine's Day, or maybe Halloween!
but I tweaked it. I substituted curry powder for the Italian seasoning, and increased the crushed red pepper flakes to 2 teaspoons. I also added kasuri methi. These modifications make it more Indian (and more delicious, I'm guessing!). I haven't tried the original minestrone recipe with the Italian seasoning.
This is a great recipe, and has become a firm favourite in my home. It's easy to cook and a great way to use up vegetable odds and ends you may have in your fridge (like the blogger says). It goes with any starch (pasta, mashed potatoes, bread, rice) you may have, or just drop in potatoes or pasta and let it all cook together. It's been especially hearty and satisfying now that the weather's turned colder.

dhoool menu... big ummmma from me:) i tried rasmalai from showmethecurry website and it was simply out of the world. they use only 1 cup sugar to cook the paneer and one would think it is less sweet. but when soaked in malai (milk cooked down) it was just perfect..
