Smile Drumstick & Onion Sambar with Potato curry

Drumstick & Onion Sambar with Potato curry

Pressure cook the rice and dhal (in 2 different containers) for 3-4 whistles.

Tip: soak the Toor dhal in the morning (before you leave for work in hot water)- this way the dhal cooks quicker and better.
Ingredients for Sambar:
Drumstick- Frozen-1o small pieces (previously cut)
Sambar powder- 3tsp
Haldi (turmeric powder)
Asafetida (hing)
Curry leaves
Fenugreek seeds (Vendhayam)
Onion- ˝- Sliced
Tomato-1-finely chopped
Tamarind paste- 1 ˝ tsp
Curry leaves

1.Chop the onions in slices and keep it aside.
2. Pour hot water over the tamarind paste kept inside a bowl. This way the paste gets mixed well with the water.
3. Wash the drumstick well in cold water and microwave it for about 2 minutes.
4. Place a kadai/pan on the stove. Pour some oil, add mustard seeds and fenugreek seeds.
5. After the mustard seeds sputter, add hing, curry leaves and haldi.
6. Add the sliced onions, saute for a few minutes and then add the chopped tomato, then add the sambar powder and stir it quickly.
7. Now add the drumstick, tamarind water and salt.
8. After 15min, it is reduced considerably and then add the dhal. Boil for a minute or two.
{Note: By the time sambar boils, pressure is off in the cooker and we can take out the dhal.}
9. Sambar is ready. Garnish with coriander leaves.

We can substitute any veggies according to our taste.

Side dish: We can make this when the sambar is boiling.
Potato curry:
Ingredients:Potatoes - 4 or 5
Dhaniya powder ( mixture of dhaniya,redchillies and channa dhal-coarsely powdered after dry roasting in a kadai)
Haldi
Hing
Salt for taste
Curry leaves

1. Chop the potatoes into square pieces (medium sized)
2. Microwave them in a container with water(add water so that the potatoes are immersed) for about 8 minutes (depending upon the power of your microwave)
3. Drain the water from the potatoes and keep it aside.
4. In a kadai/pan, pour some oil, mustard seeds. After the seeds sputter, add haldi, hing and curry leaves.
5. Then add the pototaoes and mix well. Let the water evaporate. (there will some water even after we’ve drained the water)
6. Cook on medium heat throughout so that the potato forms an uniform golden brown roast.
7. Now add salt and dhaniya powder. Keep it on stove for 6-8 min and toss/stir it every now and then.
By the time sambar is ready, potato curry is also done ! :)
So, we have delicious sambar rice with potato curry ! Perfect dinner !!

We can have cucumber sliced into round pieces, with a dash of salt and pepper for a very simple salad accompaniment.

Hi maithreyee

I made the vegetable masala rice and Pakodi kadhi with green pepper and watercress curry for dinner. The vegetable masala rice was superb. The soaking gave the rice the extra length.

Egg Rice:

Ingredients:

Egg - 3

Onion - half portion of 1 onion (sliced thinly)

G.chillies - 4, 5

Garlic - 3 cloves

Clove - 1

White pepper powder - 1 1/2 tsp (optional)

Black pepper powder - 2 tsps (can adjust accordingly)

garam masala powder - 2 pinches

Salt

Oil - 3 tsps

Preparation:

Beat the Egg well and keep aside.

heat oil in a pan, add clove, then add onion slices, saute till pale pink, then add garlic and green chillies, let it saute for 2 mins, now add the beaten egg, salt and pepper and mix well. Reducd the flame and kindle well, if necessary add little oil to avoid sticking, when the raw smell goes off add the garam masal powder and keeop it in sim for 5 mins. Mix this with basmati rice or long grain rice.

Quite tasty and easy.Non-veg food lovers will like this easy recipe.Hardly takes 12 mins altogether.

Note:

White pepper is optional; but the flavour increases the aroma and taste;likewise ajinomotto;

IF you have left over chicken can crumble and saute after onion is sauted well.Else finely chop fresh chicken and saute well after onion is sauted.

For garma masala i use shakthi masala, the aroma differs based on the brand or homemade powder we use, but do not add more 1/4 tsp for a cup of rice.

Boil one cup of basmati rice and spread well ; let it separate and then add the above masal.One cup i mean before cooking.

Hi friends,

My contribution for mouth watering recipe within 30 minutes is Jeera rice with Dhal fry.




Ingredients:

Rice:
  • Spring Onions
  • cumin seeds
  • pepper powder
  • salt
Dhal fry:
  • Toor dhal
  • jeera
  • onion
  • tomato
  • green chilli
  • coriander
  • salt
Pressure cook the dhal (4 to 5 ) which would take alteast 15 minutes.

Chop spring onions and keep it aside. Take a pan. Add 2 tablespoons of ghee, put the chopped spring onions, salt and pepper powder, saute it for 1 minute, mix it with raw rice and keep in the electric rice cooker. This takes about 15 - 20 minutes to get ready.

Meanwhile chop the onions, tomato & green chilli and keep it aside. In a pan add 2 - 3 tablespoons of cooking oil, add jeera, add onions & green chilli simultaneously, fry till golden brown. Approximately after 3 minutes add tomatoes. It would take 5 minutes for the gravy to get ready.. By this time the dhal is ready and add dhal to the gravy and garnish with coriander leaves.

Serve as its ready to be gobbled up... :
