| Normally, I use tomato paste and rasam podi. I fry it in oil to substitute garlic and onion in gravies. This can be used in any gravies . |

| If you can get hold of leek, its a good substitute.. Celery can also help.. but it has its own flavor, so might not be that big a help.. same goes to cabbage.. I am not sure if you will get that flavor with cabbage since it has its own flavor.. Why not buy and keep onion powder, its very handy... Also hing when fried in oil, also might help.
