agathipoo bhajji,
the flowers of agathi keerai is very lovely to look like those chinese flowing ladies that they show in white garment flowing behind, and as usual mix the chanadhall ka atta with a pinch of baking soda and little redchillie powder and hing, salt and let it ferment for sometime say may be 15 to 20 minutes now dip the flowers and fry ...remove when golden brown soft and crispy is this just a light tiffin once in a while....regards sunkan

Default Kuttu Ka Atta Pancake

For the batter
Atta-300 gms
Cumin seeds-2tsp
Red chilli powder-1tsp
Agenerous pinch of hing
Low fat butter or margarine
For topping
Paneer-150 gms
Fresh coriander
Green chillies-2
Sift the flour with salt, add cummin seeds and red chillies and mix well.Soak hing in water and mix the hing and flour in water to make into a batter of pouring consistency.Grate paneer and divide it into 16 equal portions.
Melt just enough low fat butter in a small non stick pan ,spread a portion of the batter to make a 4 inch pancake and shallow fry for a few seconds .Then sprinkle a portion each of paneer and vegetables.Add butter and ccok.LIft the pancake and flip it over.Cook for 45 seconds.Fold and remove.Serve.This is healthier as it has high fibre content.
