| The reason for the colour (absence/presence), is Safron and not Jaggery. Did you try adding Safron? If so, did you add it before bringing to boil? When you bring this to a boil, Safron will bring color to Payasam.

| If you use kesar color, you will get only the color. But not the taste (as you might expect from the photo :D ). For best results, use saffron.
