Default How to make Khoya/mawa..?

Hello there,

As I live in UK, i dont get khoya/mawa out here..i know that i can make this at home but ist v time consuming.. I have heard that u can make Khoya by using Milk powder..do you know how to make it..? In some Mughlai dishes or Sweets like Gajar ka halwa we use Khoya in india, If you know the solution for this please let me know..

Default American wheat flour for chappati!!

is it possible to use wheat flour from American grocery stores for making chappati? I live in a very small town, the only indian store often has old atta. Wherein I find small white worms hence land up throwing it. THe guy knows he is the only one so doesnot monitor product quality. Please advice if its possible to make chappati from wheat flour in American grocery and also which brand, thank you very much.

I have seen one of my friends making chapathis with the whole grain flour available in american grocery stores. She says its good, I've not tasted though.

Dear Nazneen,

I usually buy American wheat flour (King Arthur brand - whole red wheat unrefined flour) and mix it with the Indian wheat flour. I feel that almost all brands of the wheat flour that we get in Indian stores is mixed with maida. So I mix it with this American store bought wheat flour to give more fibre.

If you don't want to mix it with the Indian flour, buy the whole red wheat flour and the Pillsbury wheat flour and mix them. I tried making rotis out of the American flour alone, I found it very difficult to make them into roti shapes.. It was tooo gluttonous.

The wheat flour from the american store can be used to make chappatis. the end result will be a little bit hard. I tried it.
You can buy the chapathi flour when you go over to NY city,or NJ which ever is near to your,from the indian store and keep it in the fridge. this way worms will not be there.

Thank-you for your suggestions I will try it and let you know. I am so "yucked out" by the worms thing in Indian wheat flour. In my case, I've opened up the packet and found jaali in it and when I look more carefully I find white worms "yuck so gross". Its happened too many times for me. Thank-you again.
