Hi Ptamil,

I am in the same situation like you. I cant make good chapatis. But puris i manage with making proper shape thru rotimaker and fry immediatly. Adding milk really helps and the dough should be soft. My MIL makes excellent phulkas. I have seen her making so many times, but i can never make like her.

Try making dough in food processor and after taking out apply oil and make the dough soft.

Try, try, try, one day we will surely make good chapati. All the best for me and you.

Just saw this post. I am in no way an expert but thought i'll add my experience.
The dough is the most important. Add little oil + warm water to make dough. I use food processor. The dough consistency should be slightly moist to touch. that is very important. slightly moist. when you press dough , it should press under hand. very slightly. follow all other tips given. also these days fresh chappathis are sold every where and in some places people cook and give too. try other options. good luck

Dear tamil,

When you knead the dough, if it comes out a bit moist make chappathies that day and if it is a bit stiff then make puris. They will come out. Keep trying like this. You'll get to make the best chappathies and puris . I also didn't know anything when I got married. Only started learning after my son was born.

I never add oil to my dough, but I have Gas stove. I can adjust the heat. These are very simple things to get adjusted to. Get a dough maker if possible. That'll help you.

Thank you really for the immediate posts. I was actually very fed up yesterday by my chapatis. After reading this, I do feel better. You all made my day :)

I do shall try all the suggestions one by one till I succeed :) Hope I do it soon

Yamuna, I am in Tampere area. Thanks for the invitation, If I had been in Helsinki definitely we could have met up...

The dough I make I feel at times that it is correct becoz I can touch and see it is soft. And rolling also comes out evenly and thin. Till that point, I think I get there. However making on the tawa i have felt I am doing it wrong somehow but really trying to find out whats going wrong where.

So as far as I understood,
I should keep the tawa to get hot on heater at 6. Once it becomes hot enough, I put the chapatis and flip it immly?
Max, can I say I should be taking 30-40 seconds for one chapati? If more than that, am I overcooking it?

Dear Tamil,

Then you would be putting in oil with the rolled chappathy? Am I right?

After the tava is heated, put in the chappathy and once it chages colour slightly or if you see small bubbles forming on the chappathy, flip it. At the most it'll take 30sec

Like wise, you heat the otherside also and then sprinkle a little oil on top and then again flip it. If you add more oil it'll turn crispy.

It'll come out nice and soft.

Try it out and tell us. OK.

hai,

when u make a dough to chapatti,add little oil and keep the dough atleast for an hour before u start preparing..at the same time when u add milk,let it be slightly warm..
For preparing puris, u have to fry it as soon as u make the dough..for buffed puries ,let u keep the gas high and put the puri to the oil..immerse the puri in oil for a second and leave ..the puri will turn fluffy...

Click this link for 'Soft chappati'. I think as per Yamuna, if you adjust the heat you will get good chappati. All the best.

I couldnt try out rotis over the weekend as it was very busy with guests and past two days I am so tired even to come to office. I actually feel sick today also, hence would be going off early.

Hvae made a note of all the tips and shall definitely try them by tomm once I feel better.
I feel like having molagu rasam today. I just miss mom's rasam so much.

can you suggest some tips for making hot and tasty rasam. I have made rasams, but I dont get the taste which my mom makes. I asked her and I tried following the same steps...If you can start another thread (if you have time) or give some links, anything would be useful.

IAM VERY SORRY

pls pls dont say add oil, add warm water, add boil milk or

make dought little sticky

make the dough half an hour b4 u prepare roti
etc etc etc

i followed all ur rules, but end result.........it didnt came good

iam fed up with this..........but luv to eat and its necesaary for my health also

but IAM HELPLESS
