| SALAD WITH HONEY-MUSTARD DRESSING RECIPE: This is another refreshing low calorie stomach filling salad Chop one each of red, yellow, green peppers, one onion, one apple, 2-3 baby corns, 1/2 cup cabbage and 1/2 cup pineapple pieces. Whisk together 1/4 cup low-fat mayonnaise, 1 tbsp mustard pwd, 1 tbsp lemon juice, 1 tbsp honey and pepper to taste. Combine this dressing with the chopped vegetables and fruits. Chill and serve.If you do not like mayonnase you can add low fat yogurt.Honey is very good for healthespecially for ladies. Bye |

| Dear Arun and golden is it necessary to add honey or sugar...i really dont like honey.......or even using sugar for salads.........i never used to eat fruit salad..........iam interested in veg salad only....... And, in India...we very rarely use OLIVE OIL for cooking............thugh we get enough brands in our supermarkets....but i am confused with which brand to buy here........like which is real good one for cooking..........can any one suggest........( chennai friends)....

| Another salad thats very simple and will be well-appreciated during summer is this: 1 cucumber chopped 1/2 an apple (with the skin) chopped. Mix these with salt and ground pepper. Chill in the fridge for atleast 30 mins before serving. The apples are what that makes the salad memorable. anu |

| Nandu I would also like to hear more inputs.. and gladly share the only one I regularly make Its just shredding romaine lettuce and to it adding olives, pickles , onion sliced and croutons and shredded cheese. To this I sometimes use dressing from Olive Garden which is a favorite at home or Italian dressing always works. |

| Salads from my store (A collection over the years from net) Dressing: Avocado - 1 (peeled and pitted) lemon juice - 1 table spoon mayonnaise - 1/2 cup hot pepper sauce - 1/4 teaspoon olive oil - 1/4 cup garlic, peeled and minced - 1 clove salt - 1/2 teaspoon Salad: Romaine lettuce- 1 head (rinsed, dried and torn into bite sized pieces) Cheddar cheese, shredded - as per your taste Tomatoes - 2 diced green onions -2 chopped Pitted green olives - as per your taste Coarsely crushed corn chips - 1 cup Method: Mix avocado, lemon juice, mayonnaise, hot pepper sauce, olive oil, garlic, and salt until smooth, using Food processor or blender. In a large bowl, toss all the salad ingredients. Mix with the avocado dressing mixture just before serving.

| Hi Nandu, I can very well relate myself with thi Topic, coz this was there on my mind for quite time now... since during winter there will be very little or No outdoor actvity i wanted to keep a strict check on whatever i eat ... So have already started on having salads almost twice a day. This is what i do.... since i am very picky... i make very indian version of my salad. Salad:- Lettuce :- Torn into bite size(even i prefer Romaine or Ice berg) Cucumber :- Sometimes i cut them round or small stick size(depends on my mood Baby carrots (size varies) Boiled corn :- Freh or frozen raddish :- small red one or white one which we get in indian stores Orange segments :- that gives a dash of sweetness to my salads. Apple :- cut into pieces(i try to reatin the skin) Walnuts /sunflower seeds :- just a small handful to add crunch Dressings:- 1. Lemon :- Lemon juice with Kosher salt and cracked black pepper(very traditional old method of dressing with very little olive oil 2. Yoghurt dressing:- Fat free whipped yoghurt with salt,sugar and pepper again(i love this one for its creaminess). Would like to read some more ideas from other ILites. Cheers vaidehi |
