    Hi Krishnamma,

    I have been thinking of trying something with the Big Eggplants available here in US. Whenver I use to cook eggplant, I buy the small ones from Indian stores. But now I wanna know if the big ones are same like the small ones. Can I cook Sambar, Poriyal,etc with the small ones like I do with the small ones??

    Hi Suganya,

    You can make crispy curry out of this Eggplant.

    Ingredients:

    Egggplant - 1 nos
    Chilly powder - 1/2 tsp
    turmeric powder - 1/4 tsp
    salt - according to taste
    Garam masala powder or curry masala powder - 1/4 tsp
    Rice flour - 1 tsp
    corn flour - 1 tsp
    besan flour - 1 tsp

    Method:
    Wash the Eggplant and cut it in a very small and thin round shape. Take one big plate or basin and pour all the above said ingredients and mix well with spoon or hand without any water. Then soak the cutted eggplant in the mix. Place tawa or kadai in gas and heat it well with pouring little oil. Then place the eggplant in tawa and roast well on both sides by pouring the necessary oil. Crispy eggplant curry is ready.

    U can make kathirikkai biryani too.

    u can make kathirikkai sadham too.

    with the big egg plant you can make thogayal, puli kothsu and thayir pachchadi. all the dishes will be very tasty!!:)

    Well, You can cook all time favourite "Brinjal bhurta".
    For that you have to roast it either on flame or in microwave (15 min on 40% - a medium to big size). After that peel it and discard outer layer. Now mash it with potato masher or spatula.
    Fry 1 onion and tomato. add spices - haldi, dhania powder, lal mirch powder and salt. Mix in mashed brinjal and simmer for 5 minutes. Garnish with green coriander leaves and serve with chapatis.

    HI Suganya,

    I moved your thread from mine to here. yes you can use the big one as usual like small one. One big advantage of big one is you can make GOSTHU. you can see this recipe in my thread. you can bake it in oven or gas stove and make many kinds of side dishes other than preparing curry, sambar etc.,
