Hi ladies, I have a bit of trouble making yoghurt at home using the carton milk packets. I have tried everything possible, but the milk doesnt set the way it does in India. Any suggestions please..
Boil the milk without adding water.No need to keep the flame in simmer after it starts boiling.Just switch of the stove at this stage and let the milk come down to a very mild warm stage.Just check the milk by dipping your clean finger in the milk.If you feel it is very mildly warm, pour the culture ( old yogurt ) to it.Just close it with a lid and leave it for 6 to 8 hours.The yogurt will be perfectly ready.This is how I make yogurt.Good luck.
Thanks hemalatha and akhila, one more question, how much of old curd do I need to add to the mix? I use around 1 small tea spoon, shd I add more of that? Rgds
For how much milk do you use 1 tsp culture? Usually for 1 gallon of milk I add nearly 50 to 60 ml of culture.Nothing will go wrong even if you add 1 cup of yogurt.You will get your milk in to yogurt very soon with more amount of culture.
Hi Here is a small traditional tip. When the milk is warm, add 1 ts of yogurt in the milk. Stir the milk with the spoon well and transfer the entire content into the Mud pot and leave aside for 6-7 hours. Yogurt, will be available without Pulipu and will be sticky too... Thanks
Hi IQ! did you manage to get the yogurt? ...Here is my small tip. In the lukewarm milk add 2 or 3 chilli stems and the tips of those chillis near the stem, together with the culture and stir well. Take a big vessel (preferably rice/pressure cooker, caserol...)with warm water and keep the yogurt containers in it and close with a lid(this is to maintain Temperature). your yogurt will be done within 3to4hrs. Sure you'll get a creamy yogurt.:thumbsup *Remove the chilli parts after your yogurt is done. * Better Use stainless steel yogurt containers. * dont worry ur yogurt wont be spicy!!!
Wow Cool tip.. I tried all the tips mentioned and finally am able to make yoghurt at home.. Thanks to all., one thing I notices is when I used skimmed milk or low fat milk, the yoghurt is not that creamy or thick, it's much watery.. Have been trying to get FP's full cream milk, but they dont seem to have any stck these days But thank u all, now am able to make good yoghurt at home..
