Location of your apartment should depend on lot of things.. Commute to office. If New york, that makes a lot of difference, since you need to find places that near to train station to avoid hassle and cost :) And if kids, you need to be in county that has best public schools and not in ones that has gangs and all that non sense.
(1) you are coming to little india, so no worries, you have subzi mandi in almost all counties here. Theres a place called oak tree road in Edison that has lots and lots of indian stores.. its an entire road with all indian stuff. By now you must have then understood, that Edison is largely populated by us ;). Other factor is there are lots of apartments like (1) blueberry village, (2) oxford arms etc (3) rivendell thats walking distance to the NY train station.
(2) Walmart, Target etc is in all counties.. If you are in somerset, then you can either go to the walmart there or go to Edison, which has everything Costco, BJs, Walmart, Target, Sears, Marshalls, Macys.
also we dont have safeway.. but we have something called pathmark. Also we have stop&shop and shoprite.. Again they are in all counties/townships.. so no worry. Some are even 24hr.. so no problem at all.
Costco is in Edison and BJs is in Rt.1, thats near from somerset.
(3) Restaurants, Again its little india.. you have lots of them here and you are 1hr away from NY where there are amazing restaurants. In Oak Tree Road you have lots of them

Jupudi - Gujarat
Punjabi ones are couple of them

Other than this.. you have lots in Nj to try like Anjapper chettairs etc..
If you are a non-veg, you have lots to try too :)
(3) Now coming to rent.. One bedroom ranges from $800 to $1800 Depending upon what you expect.. The highclass one ranges from $1600-$1800. But average it shud be $1000-$1100. It will be one bedroom with all appliances like Fridge, dishwashes, washer, dryer etc.. and some might have microwave.
(4) Bridgewater and Franklin shud be having the same rent costs... But if you have kids.. franklin public schools are not good.. so plan accordingly..
