Goan/Mangalorean Recipes

Hello everyone
Want to start this thread where we can exchange goan and mangalorean recipes.Will be posting a few in the days to come and looking forward to many more.Love to try out new recipes.

FISH FRY

Clean any fish.Apply salt,a little chilli powder,turmeric powder,ginger-garlic paste and a squeeze of lime juice.Marinate for 20 mins.Fry in hot oil.Serve hot.Delicious.Goes well with fish curry and boiled rice.Yum.

Nice to know that someone wants to share goan/manglorean dishes .Actually I too wanted to start this thread but had no enough time for the past few days .Its good you strarted it , thanks.I will share a few recipes too .

Todays recipe is goan fish curry.
This is how i usually prepare fish curry.
Wash approx 5-6 king fish slicesand salt them for 15 mins and wash again.

Soak a lemon sized ball of tamarind in a bowl of water.

Grind 1/4 cup grated coconut,1/4 tsp cumin seeds,1/2 tsp coriander seeds,2 cloves garlic,1/2 tsp turmeric and 6-7 kashmiri chillies.Add 1-2 chillies more if needed .The masala should have a bright orange colour.

In a vessel put the ground masala,2 slit green chillies,the extracted tamarind water,2-3 curry leaves and 1 cup water.Bring it to a boil.Add the fish slices.add salt.cook till fish is done.Add kokum if you need to when the curry is boiling if the curry is spicy.check for salt and spiciness.

Same masala can be used for prawn curry.Only you can add ladyfinger once the curry comes to a boil.

OK .this is my goan recipe for today (Stuffed Pomfret)


1 large pomfret,
For the paste
1/2 coconut (grated),
1 large bunch of fresh coriander leaves,
2 flakes garlic,
1/4" piece ginger
2 green chillies ,
3 peppercorns,
walnut-size bal of tamarind,
salt and sugar to taste.

Method
Grind together the grated coconut coriander leavesgarlic,ginger,green chillies,tamarind, peppercorns ,salt and sugar.

Leave the pomfret whole and slit on either side.Stuff the pomfret with the prepared paste, secure with a string,heat oil in a pan and shallow fry the pomfret on both side till done.Remove string. Serve hot garnished with sliced lemon.Enjoy.

Nice recipe.Hubby dear is in love with seafood specially fried fish.will definitely try this.I usually stuff pomfrets with rechead masala for frying.Will try this out.Thanks.

Excellent recipe for Fish Curry. Very authentic.

Can anybody share with me a recipe for Samar Masala that is used to prepare prawn curry? I have tried the ones posted on Goan sites on the net but none of them compare with my grandmother's recipe, which unfortunately is no longer available.
