Default Recipe-Related queries

hummus dip

1 chick peas - 1 can (cooked) or cook chick peas soaked in water till soft.
2 garlic cloves - 3
3 lemon juice - of 1 lemon
4 sesame paste(thahina) - 1 table sp or ground white sesame seeds.
5 salt - enough
6 olive oil - 2 tb sp
method
grind ingredients 1 to 5 altogether.add little water which used to cook chick peas. make thick paste. pour olive oil on top. use with sand wich, chappathi, arabic roti(khubz).
you can make this without adding sesame paste also!

OK, I am planning to post some more, I know only few recipes.
Believe Arabs eat healthy food, they don't take masalas and oil like us. and when they eat non veg they grill it and melt the fat in it!
all their foods are very healthy and a good combination of veg and non veg.

Default garlic paste!

ingredients.
garlic peeled -4 bulbs
lemon juice-1cup
salt - 1 tsp
olive oil-3 cup
method.
blend first three altogether till smooth.add olive oil during blending. when becomes mayonnaise consistency, stop and keep it in the fridge. if u need add little pepper powder during blending.
i would make this, like hummus dip goes well with sand wiches, grilled chicken, salads etc.
cut cucumber, cabbage , capsicum, tomato , cabbage etc.(if u have only one veg no problem). take two pieces of bread. mix veg with garlic paste and keep between the bread pieces. if you are non veg keep omelet or chicken shredded with this and enjoy...

Thanks for the receipe. hope you will post few more soon. I liked the garlic paste and i am definitly going to try it out and give you a feed back soon. Just one think, which is the paste which is served along with garlic paste , it is made of bringal / eggplant ? If you know the receipe of that please send it to me.

Default egg plant dip

ingredients
Eggplant-one large
Clove garlic-one clove
Salt to taste-
Tahini (sesame seed paste)-4 table sp
Water-1/4 cup
Lemon juice (up to 1/2)-1/4 cup
Method :
  • bake or grilleggplant until well done (grilling is best). Remove the skin and preserve the liquid. Chop fine.
  • Mash garlic with salt. Add tahini and blend thouroughly. Slowly add water and mix well. Add lemon juice and blend well. Add the eggplant and mash with a potato masher or mdaqqa (a large wooden mallet).
  • Hummus dip usually serves with garlic paste.
dear simone, i haven't tried this recipe yet, plan to post what I have tried in this thread. can't post for few days, go to Kerala for vacation and will be busy...(pls share some of your favourite arabic dishes).
have collected and tried some of the arabic recipes. see you ..

Default Arabic Rice!

Ingredients
Chicken, cut up- 1
Tomato paste, small can- 1
Onion chopped - 1
Rice basmati - 4 cup
Olive oil- 1/4 cup
Salt
Cinnamon and Clove - each 4
Black pepper -1/2 tsp
Cumin
Cardomom- 4
Method

Heat oil over medium heat in deep cooking pot. Add chopped onions, and cook until transparent.Add chicken and cook half way done. Add spices.Stir in 8 cups water, add tomato paste and rice. Allow to come to a boil.
Cover and reduce heat. Let cook until rice is tender.
Since the amount of cumin is not specified in the recipe, I added only few.
I have tried out this recipe and turned out good. Especially children will love it since no spicy and rice is very tasty.

Hi all,
Does anyone know what is shahjeera called in English. When I searched on net, I found it as Caraway seeds. But when I went to Indian Grocery shop, I found that caraway seeds is different and black cumin seeds as shahjeera. So I'm very confused now. Also how does it look like? Black or just normal cumin seeds.

shahjeera is caraway seed. Actually its called Siahjeerah which means dark zeera as it looks dark form of zeera (which is cummin).
